THE IRISH POTATOES

My sister gave me this recipe years ago and it has become a staple of our holiday or 'company is coming' type of dinner. It's easy to assemble and can be prepared ahead of time. It pairs well with beef, ham, or chicken. Leftovers, if there are any, reheat well. Everyone always loves 'The Irish Potatoes.' Yes, I know 'The Irish Potatoes' are fattening, but without the butter, whipping cream, and half and half it is just not as good. Substituting margarine or frozen hash browns would be a travesty.

The Irish Potatoes image

Steps:

  • Place the potatoes into a large pot and cover with salted water; bring to a boil. Cook the potatoes at a boil for 10 minutes; drain. Set potatoes aside to cool.
  • Once potatoes are cool enough to handle, slide the skin from the potatoes and discard; refrigerate peeled potatoes until completely cold, about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Grease a 9x13-inch baking dish with 1 tablespoon butter.
  • Grate 2 of the potatoes into the bottom of the prepared baking dish. Sprinkle about 1/4 of the minced onion over the layer of potato; season with salt and black pepper. Repeat layering until all ingredients are used and dish is full.
  • Drizzle melted butter, whipping cream, and half and half over the potato mixture; season with paprika.
  • Bake in the preheated oven until the top is bubbling, about 30 minutes.
  • Garnish with chopped fresh parsley to serve.

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

Irish Boxty (Crispy Fried Potato Cakes) image

Steps:

  • 1. Set half of the potatoes aside for later. Peel and cut remaining potatoes into large chunks; place in a saucepan. Cover with cold water and bring to a boil over high heat. Reduce heat to low and cook 15-20 minutes, or until tender.
  • 2. Drain and place in a large bowl. Mash potatoes and set the bowl aside.
  • 3. Now peel and grate reserved potatoes. Stir them into the mashed potatoes.
  • 4. Add onion, flour, salt, and pepper; mix well. Stir in milk and egg to form a batter.
  • 5. In a large skillet, heat oil over medium heat. Drop batter from a tablespoon into the hot oil.
  • 6. Cook 3-4 minutes on each side.
  • 7. Drain on a paper towel.
  • 8. Transfer to your serving dish and serve with applesauce and sour cream. Bet you can't eat just one!

IRISH PAN-FRIED SHREDDED POTATOES

This recipe was featured in a local magazine in March 2001. It was in an article written by local chef that had spent a month in Ireland learning their local recipes. He writes, "To serve, place a serving of hash browns in the center of the plate. On one corner, place several slices of corned beef and on the other side, add the braised cabbage. I like to top this off with a dollop of sour cream mixed with horseradish and chopped parsley."

Steps:

  • Squeeze any water out of the grated potatoes and place on a paper towel.
  • Heat the oil and unsalted butter and cook the onions until they start to clarify.
  • Spread the potatoes over the top and mix slightly. Cook until they are brown on the bottom.
  • Turn potatoes over and brown the other side.
  • Serve.

Easy Fried Potatoes & Onions image

Steps:

  • Heat oil and butter in a skillet. Add the onions and cook until soft and lightly browned. Remove the onions from the pan and reserve.
  • Slice the potatoes into 1/4 inch slices. Add them to the hot pan and brown on both sides.
  • Return the onion to the pan, toss and season. Serve warm.

  • This next step is important. You’ll only want to cook then 20 – 30 minutes depending on the potato size. Slide a fork into each potato. The outside should be soft but the center still firm. They will cook further after shredding. If you cook them too long, they will be difficult to shred and fry so again, the centers should be firm, almost hard. I took mine out, one at a time, as each wase done. All of my medium-sized potatoes were done in 20 minutes.
  • Once done, drain and fill the pot with potatoes and cold water. Drain and fill again with more cold water and move the pot to your counter.
  • Pull one potato out at a time onto your cutting board and with a sharp knife, drag the blade edge along the skin and it will peel right off. Do this for all of the potatoes. Discard skins.
