EASY HOMEMADE SHRIMP FRIED RICE

This is a quick and easy shrimp fried rice recipe that my kids all love! This recipe is best warm and fresh, but will keep airtight in the refrigerator for up to 5 days or in the freezer for up to 4 months. Reheat gently, as desired.

Easy Homemade Shrimp Fried Rice image

Steps:

  • Heat sesame oil and olive oil in a large nonstick skillet or wok over medium-high heat. Add shrimp and cook until they are bright pink on the outside and the meat is opaque, about 3 minutes, flipping halfway through.
  • Remove shrimp from the skillet using a slotted spoon, allowing oils and cooking juices to remain in the skillet. Place shrimp on a plate and set aside.
  • Add peas and carrots and corn to the skillet and cook, stirring intermittently, until vegetables begin to soften, about 2 minutes. Add garlic; cook and stir for 1 minute. Push vegetables to the side of the skillet, pour eggs into the other side, and cook to scramble, stirring as necessary, 3 to 4 minutes.
  • Stir shrimp, rice, and green onions into the skillet. Drizzle evenly with soy sauce, season with salt and pepper, and stir to combine. Cook until shrimp is reheated through, about 2 minutes.

2 tablespoons olive oil
1 pound uncooked medium shrimp, peeled and deveined
1 cup frozen peas and carrots
½ cup frozen corn
2 cloves garlic, finely minced, or more to taste
3 large eggs, lightly beaten
4 cups cooked rice
3 tablespoons thinly sliced green onions
3 tablespoons low-sodium soy sauce, or more to taste
½ teaspoon salt, or to taste
½ teaspoon freshly ground black pepper, or to taste

EASIEST FRIED RICE (USING UNCOOKED RICE)

Found this on an Aussie Website and have used it ever since. It is the easiest fried rice I've ever made and it is so good. I have often wanted to cook fried rice and I have had no leftover cooked rice ready well you don't use leftover rice for this recipe so it is a very handy recipe.

Easiest Fried Rice (Using Uncooked Rice) image

Steps:

  • Cook the eggs in a pan with a quick spray of olive oil. I break the yolks and run a knife through them and cook until just set then cut into small strips.
  • Fry rice until browned, add stock and cook until moisture is absorbed and rice is tender.
  • Add shallots, then egg and bacon pieces, cooked prawns and heat through.
  • Add lemon juice (if using prawns) and soy sauce to taste.

2 tablespoons shallots (green onions)
1 cup prawns, cooked (or add chicken, pork or anything you like instead)

1 tablespoon lemon juice (if using prawns)
2 -3 tablespoons soy sauce, to taste

  • In a small bowl, stir together the oyster sauce and soy sauce. Set aside. Grab a small bowl and a large, flexible rubber spatula and keep both handy.
  • Heat 12-inch nonstick skillet over medium heat until hot, about 2 minutes. Add ½ tablespoon Land O'Lakes® Butter with Canola Oil, and swirl to coat the bottom of the pan. Add the eggs, and cook without stirring until they barely start to set, about 20 seconds. With your spatula, scramble and break the eggs into little, bite-sized pieces. Continue to cook, stirring constantly now, until eggs are just cooked through but not yet browned, about 1 additional minute. Transfer eggs to the small bowl and set aside.
  • Return the skillet to the heat, and increase the heat to high. Let the skillet warm until it is nice and hot, about 1 minute. Add the canola oil, and swirl to coat. Add the diced bell pepper, and cook until it is crisp-tender, about 4 minutes.
  • Add the remaining 1 ½ tablespoons Land O’Lakes Butter with Canola Oil, peas and carrots, and edamame. Cook, stirring constantly, for 30 seconds. Stir in the garlic and cook until fragrant, about 30 seconds (do not let the garlic burn!).
