REBECCA'S INSTANT CINNAMON OATMEAL

An easy way to make individual instant oatmeal packets for a fast and hearty breakfast. The kids love to help! Add raisins, honey, or fruit as toppings if you like! My family of 7 will triple the recipe and put all the filled baggies into a gallon size resealable for storage. All the kids have to do in the morning is add water and any extra toppings and then microwave.

  • Blend oats in a blender until powdery; transfer to a large bowl. Add wheat germ, brown sugar, milk powder, and cinnamon; stir until evenly distributed. Spoon 5 tablespoons oat mixture into 17 individual sandwich bags.

HONEY WHEAT OATMEAL BREAD - ALL WHOLE GRAIN VERSION

This is now our daily bread -- my daughter makes it several times a week in our bread machine. This has replaced the earlier version that I have posted because we've tried to eliminate white flour from our diets wherever possible. The vital wheat gluten is what makes it possible for the bread to rise nicely. Gluten is the protein part of the wheat kernel, and you can buy a powdered form of it at most health food or whole food stores -- that's what you need for this recipe to work. Without the gluten, it'll be a brick. So, get the gluten unless you want to build a bread wall. Cooking time is for the white bread cycle on our machine. Your time may vary.

Honey Wheat Oatmeal Bread - All Whole Grain Version image

Steps:

  • Put ingredients into bread pan in the order suggested by the manufacturer of the bread machine.
  • If you're going to use a timer, it is vital to keep the yeast away from both the liquids AND the salt.
  • I make this on the white bread cycle and it comes out great, but you may wish to use the whole wheat cycle.
  • I never noticed any difference except that the whole wheat cycle took a lot longer.
  • Your machine may yield different results, tho.
  • If you like crusty bread, just let the finished bread set on a rack to cool.
  • If you want a softer crust, slip the hot bread into a plastic bag so that the crust will get steamed and be nice& soft- and good for sandwiches.

Steps:

  • In a saucepan, heat water, milk, oil, honey and molasses to a simmer; stir in oats. Remove from heat; cool mixture to 120°-130°. In a large bowl, mix 4 cups bread flour, yeast and salt. Stir in cooled oat mixture. Stir in spelt flour and enough remaining bread flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover with plastic wrap; let rest 10 minutes., Divide dough in half. Roll each into a 12x8-in. rectangle. Roll up jelly-roll style, starting with a short side; pinch seam and ends to seal. Place in greased 9x5-in. loaf pans, seam side down., Cover with kitchen towels; let rise in a warm place until almost doubled, about 1 hour. Preheat oven to 350°., Bake until golden brown, 40-45 minutes.   • In a small bowl or a glass measuring cup, combine the hot water, ⅓ cup honey, butter, and yeast. Allow the yeast to bloom for 5-7 minutes. You should be able to smell and see it foam up at the top.
  • Combine all the dry ingredients, 1 ¼ cup whole wheat flour, all-purpose flour, dry milk, salt, and ¾ cup rolled oats in a bowl. Stir until just mixed.
  • Add the dry ingredients to the bowl of an electric mixer fitted with the dough hook attachment. Once the yeast has bloomed, add the liquid ingredients to the mixer, and mix on medium speed for 10-12 minutes or until the dough comes together. If after 10 minutes, the dough is still not forming a ball, add the whole wheat flour in 1 tablespoon at a time until the dough just holds together. You may or may not need all 4 of the remaining tablespoons of whole wheat flour.
  • Using a dough scraper, dump the dough into a lightly oiled bowl that's at least 2-3 times larger than the dough. Flip the dough around so that all sides are oiled. Wrap the bowl with plastic wrap and allow to rise in a warm place for 1-2 hours or until it has doubled in size (see notes for where I let my dough rise).
