SOFT-BOILED EGGS WITH PANCETTA AVOCADO SOLDIERS

Soft, creamy avocado wrapped in crispy pancetta, perfect for dipping in your morning egg

Soft-boiled eggs with pancetta avocado soldiers image

Steps:

  • Bring a large saucepan of salted water to the boil. Carefully drop the eggs into the water and boil for 5 mins for runny yolks.
  • Meanwhile, heat the oil in a non-stick pan and wrap each avocado slice in pancetta. Fry for 2-3 mins over a high heat until cooked and crisp.
  • Serve the eggs in egg cups with the pancetta avocado soldiers on the side for dipping.

Steps:

  • Fill a medium sized saucepan with water and bring to a rolling boil.
  • Make sure your eggs aren't fridge cold. By having the eggs at room temperature, it will be less of a shock for the egg reaching the hot water and therefore less likely to crack. You can also use an egg pricker to make a very small hole in each egg before boiling, which will also reduce the chances of it cracking in the heat. Slowly lower the eggs into the water using a spoon.
  • Set your timer for 4-5 mins for runny/dippy eggs to serve with soldiers, or 6-7 mins for soft-boiled eggs for a salad. If serving in a salad, plunge the eggs into a bowl of cold water as soon as the timer goes off - this will stop them cooking and cool the shells quickly for peeling.

I grew up with vegemite soldiers, my grandmother made them for my mum, my mum used to make them for me, and then I made them for my kids, and I guess it's just one of those things that will continue. I still love this recipe every now and then and so do my teenage kids and DH. Yes we are all Happy Little Vegemites here!!!! And of course it goes without saying the spread MUST be vegemite........NO alternatives !!!!

Steps:

  • Place eggs in saucepan, add enough hot water to cover eggs. Bring to boil and simmer for 3 minutes for soft boiled yolk.
  • Spread toast with Vegemite and cut into 2cm fingers(about 3 fingers)to make soldiers. Place eggs in egg cups, slice tops off eggs. Dip soldiers in the soft egg yolk.

Steps:

  • In a small saucepan filled with cold water add the egg, bring to a boil then turn down the heat to a simmer for 3 minutes.
  • Toast the bread then spread with the butter.
  • Spread 1 teaspoon of marmite on the toast and cut into 3 or 4 long strips.
  • When the egg is cooked put into an eggcup and serve with the marmite toasted bread strips.
