NEW MEXICO GREEN CHILE MEATLOAF

Growing up in New Mexico, we had access to the Hatch green chile (the best!). I add green chile to a lot of my recipes and it rather sets this meatloaf off. It's very good cold, made into sandwiches the second day.

New Mexico Green Chile Meatloaf image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix hamburger, tomatoes, green chiles, onion, milk, eggs, crackers, salt, and pepper together in a bowl. Transfer to the prepared loaf pan.
  • Bake in the preheated oven until until no longer pink in the center, about 1 hour and 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Let cool in the pan for 10 minutes before transferring to a serving dish.

Meatloaf With Chili Sauce image

Steps:

  • Preheat oven to 350 degrees, with rack in center. In a large bowl, pour milk over bread; let soak, about 30 seconds. Add sirloin, pork, onion, garlic, 1/2 cup chili sauce, parsley, Parmesan, eggs, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper. Using your hands, mix until combined; do not overmix or meatloaf will be dense.
  • Divide mixture in half. Gently pat each half into a log, and place each log in an 8 1/2-by-4 1/2-inch loaf pan. Do not press down or into corners.
  • Bake 50 minutes. Brush tops of loaves with remaining 1/4 cup chili sauce; continue cooking until juices run clear and an instant-read thermometer inserted into thickest part registers 160 degrees, about 10 minutes.
  • Remove from oven; let rest 5 minutes. Turn loaves out of pans; slice each into eight 3/4-inch-thick slices.

Steps:

  • Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Steps:

  • Deseed the chiles, and place in a bowl. Reconstitute them by pouring on 3 cups boiling water and allowing them to soak about 5 minutes. Drain the chiles and reserve 1-cup of the liquid.
  • Process the chiles with the reserved water in a blender or food processor until fine. Strain and transfer pulp into a mixing bowl. Add the honey, chile powder, and cumin and mix well. Refrigerate for 1 hour to blend flavors.
  • This glaze is excellent on grilled fish, roasted or grilled chicken, or roast pork.

12 dried New Mexico red chile pods

Meat Loaf With Red Wine Glaze image

Steps:

  • Preheat the oven to 350°F
  • In a large bowl, combine the bread pieces with the milk and mash to a paste.
  • Add the whole egg, egg yolk, chopped parsley, sage, thyme, salt, black pepper, nutmeg and cayenne and stir until smooth.
  • Add the Parmigiano-Reggiano and dry bread crumbs and stir until thoroughly combined.
  • In a medium skillet, melt the butter.
  • Add the onion and cook over moderate heat until softened, about 7 minutes.
  • Add the garlic and cook just until fragrant, 1 minute longer.
  • Let cool, then transfer to the bowl.
  • Add the lamb, pork and veal and knead until evenly combined.
  • Brush a medium oval baking dish with oil or cooking spray
  • Transfer the meat loaf mixture to the dish and pat it into a 4-by-12-inch oval loaf.
  • Bake for about 50 minutes, or until firm but not quite cooked through.
  • Meanwhile, in a medium saucepan, combine the red wine with the sugar, chopped tomato, molasses and allspice and bring to a boil over moderate heat, stirring to dissolve the sugar.
  • Boil until the glaze is thick and syrupy, about 15 minutes.
  • Brush half of the glaze over the meat loaf.
  • Continue baking for about 20 minutes longer, until an instant-read thermometer inserted in the center registers 150°F; brush once more with the remaining glaze during baking.
  • Let the meat loaf rest for 15 minutes, then thickly slice and serve.

RED CHILE SEARED TUNA WITH TERIYAKI GLAZE

Beautiful entree. Get quality tuna. This tuna is dark and crispy on the outside and beautifully red on the inside. From the cookbook, Santa Fe Hot and Spicy. Can also use tuna steaks vs. the loin. I don't even bother chilling and I sub rice wine vinegar for the mirin.

Red Chile Seared Tuna With Teriyaki Glaze image

Steps:

  • For tuna: In small bowl combine the chile powder and coriander. Dredge tuna in mixture so they are well coated.
  • In saute pan place olive oil and heat on medium high until it is hot. Sear the tuna 45-60 seconds on each side or until they start to blacken. Remove tuna and refrigerate until cold.
  • Slice tuna into 1/8" slices so edges show blackened seasonings. Drizzle with teriyaki glaze.
  • Glaze: In medium sauce pan combine all ingredients. Cook on low for 30 minutes or until mixture is reduced by 1/3. Mixture should coat the back of a spoon. Refrigerate.
