THE BEST HOMEMADE APPLESAUCE
After tasting the pure apple flavor of this homemade sauce, you just might never go back to the store-bought kind. Supermarket applesauce can be loaded with added sweeteners and flavorings. We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

Steps:
- Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
- Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
- Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.
CROCK POT RED HOT APPLESAUCE
My cousin didn't remember where she got this recipe but was happy to pass it on to me last winter. She made her's chucky, but I used my electric stick mixer/blender and made mine smooth right in the crock pot.

Steps:
- Core the apples, but it isn't necessary to peel them.
- I like the texture of having the peels in the sauce.
- Dice them very fine.
- Tumble everything into a large pot and bring to a boil.
- Reduce to the slowest simmer you can arrange on your stove so the sauce won't burn on the bottom of the pot.
- Cover, stirring occasionally, until you reach the consistency you want.
- The longer, the finer texture.
- I usually cook it about 3 hours.

As a young girl, I was amazed when Mom transformed fresh apples into this delightful, lovely mixture. I'm not sure if I liked it so much because it was made with candies or because it tasted wonderful. -Barbara Hyatt, Folsom, California

- Add your apples to your Crock Pot(s). I used two. Add 1/4 to 1/2 cup water or apple cider to each Crock Pot. This starts the cooking process to break down the apples.
- Cooked apples can be pureed based on your preferences. Mash with a potato masher if you prefer a chunkier applesauce. Apple sauce can also be put through a food mill (my method), processed in a food processor or a blender.
- Put apple puree into a saucepan. Add lemon juice and, if using, sugar. Instead of sugar I used Red Hot Candies. Boil to dissolve sugar or candy.
