AGUA DE PINA CON PEREJIL (PINEAPPLE-PARSLEY COOLER)
Every market in Mexico City, both in the city and the outskirts, sells aguas frescas, a drink of pureed fruit, sugar and water. Pairing parsley with pineapple is popular - the bitter, grassy stalks balance out the sweetness, leaving you with a drink that actually tastes healthy. Pineapple can vary in acidity, so it's best the taste and decide for yourself whether you want sugar. This agua fresca is best served within one or two days.

- 1 Combine the pineapple, water, and parsley in a blender jar and blend until very smooth. Taste, and if you think it needs sweetener, add 1 tablespoon sugar and continue blending, tasting, and adding more if desired.
- 2 Pour into a pitcher and serve cold, either refrigerated or over ice. You can also strain it, if you don't like the little parsley pieces. (I do.)

LIMBER DE COCO Y PIñA
Inspired by the flavors of a piña colada, this Puerto Rican frozen treat combines two of the tastiest tropical fruits on the island.

- Place six 8-ounce plastic cups on a tray small enough to fit into your freezer.
- Combine the coconut milk, pineapple juice, coconut cream, pineapple chunks and sugar in a blender and blend until homogeneous. Taste for sweetness, adding a bit more sugar if you'd like.
- Pour the mixture into the prepared plastic cups, filling them to about 1/4 inch from the brim. Freeze for 1 hour, then stir each one with a small spoon to incorporate the mixture again in case it has separated a bit while sitting; the limbers should be at a slurry stage at this point, which should prevent the mixture from separating again after reincorporating. Continue to freeze until fully frozen, at least another 7 hours. The limbers will keep in the freezer for up to a month.

- Blend on High until mixture is frothy, about 30 seconds to 1 minute.

Steps:
- Chop pineapple into small bits or cut into chunks and blend for a moment in a blender.
- In a glass container, add the pineapple to one quart of water in which half of the sugar has been dissolved.
- Allow to steep for 2 to 3 hours.
- Strain and add additional sugar to personal taste.
- Chill and serve.
- Makes 4 to 5 cups.
