OLD FASHIONED FLAPJACKS

Been using this recipe for many years. It came from one of McCalls oldest cookbooks. ALWAYS use real maple syrup.

Old Fashioned Flapjacks image

Steps:

  • Preheat griddle so that a drop of water beads when dropped on it.
  • Combine dry ingredients.
  • Combine wet ingredients and beat well. (Do this quickly as the butter will tend to set up when it hits the cold milk).
  • Add wet ingredients to dry ingredients.
  • Mix but not too much. Batter will be slightly lumpy.
  • Drop a couple tablespoons for each pancake onto hot griddle and cook until bubbles appear in batter and bottom is golden brown.
  • Serve with real butter and real maple syrup.

2 cups all-purpose flour (wheat can be used also or a combination of the two)
4 tablespoons sugar
2 teaspoons baking powder
6 tablespoons butter, melted
1 1/2 cups milk
1/2 teaspoon salt
2 eggs

  • Cover a large area of counter space with waxed paper and tape it down.
  • Mix pretzels, corn cereal squares, peanuts, and candy-coated milk chocolate pieces together in a large bowl.
  • Melt white chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Pour melted white chocolate over pretzel mixture; stir to evenly coat. Quickly transfer mixture to the prepared waxed paper and spread in a thin layer; cool completely. Break into pieces and store in an airtight container.

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter a 30 x 20 x 5cm deep baking tray and line with with baking parchment. Tip the butter, sugar and golden syrup into a large pan and melt over a medium heat, stirring frequently until the mixture comes to a rolling boil. Add the oats, pumpkin seeds, cranberries and carrot, and stir until well-combined. Tip into the baking tray and smooth the surface with the back of a wooden spoon so it reaches the edges of the tray.
  • Bake for 25 mins until lightly golden. Leave to cool for 5 mins, then cut into 14 even-sized rectangles and leave to cool completely in the tray. Once cool, store in an airtight container for up to two weeks. Best eaten within five days. To serve, drizzle with extra golden syrup and top with festive sprinkles, if using.

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Butter the base of a 20 x 20cm square tin and line with baking parchment. Tip the chopped apples into a small saucepan with 2 tsp water and cook over a medium heat for 3-4 mins until the apples are just soft enough to crush, but there's still a little water left in the pan. If needed, add a little more water and cook the apples for slightly longer. Remove from the heat and crush the apples using a potato masher or a fork to break up slightly, then tip into a bowl and set aside.
  • Tip the butter, golden syrup and sugar into the pan and warm through over a low heat until the butter has melted and the sugar has dissolved. Remove from the heat and set aside.
  • Combine the oats, dried apple and cinnamon, if using, in a large bowl. Tip in the buttery syrup mix and cooked apples, then stir to combine. Tip the flapjack mixture into the prepared tin and press down firmly. Level the surface using a spatula, then bake for 25-30 mins until golden and bubbling at the sides. Leave to cool. Cut into 16 pieces. Will keep in an airtight container for three days.

Steps:

  • Heat oven to 140C/120C fan/gas 1. Put all the ingredients (except the apricots, sultanas and sweets) in a large bowl. Stir everything well, then spread out onto two baking trays in an even layer. Put the tray in the oven for 40 mins.
  • Leave the granola to cool on the tray, then break it up into small chunks and stir in the sultanas and apricots.
  • Put the granola in a jar ready for breakfast. To make it suitable for magic reindeer, put a few spoonfuls into a small paper bag and mix in some sweets.
  • Tie with string or a ribbon and add a fun label for Father Christmas to find.

  • Heat oven to 160C/140C fan/gas 3. Line an 18cm square baking tin with greaseproof paper. Melt butter, golden syrup and sugar in a large pan. Mix in rolled oats, carrots, orange zest, apricots, cinnamon and pumpkin seeds. Stir everything well, then pack into the prepared tin, pushing down firmly.   • In a large bowl, combine the first 5 ingredients.
  • Set aside.
  • In a microwave-safe bowl, heat the chocolate chips and oil for 2 minutes, stirring after one minute.
  • Continue to microwave, 10 seconds at a time, until smooth, stirring as you go.
  • Do not overcook!
  • Pour over the cereal mixture and mix well.
