REUBEN "SANDWICHES" IN A TORTILLA
This is a great twist on rueben sandwiches and it's much easier to eat and reheat. I do not remember where I heard about this recipe or the exact measurements I just "eyeball" everything and I thought I'd give everyone a guess at how to start.

Steps:
- drain saurkraut.
- wrap tortillas in damp paper towels and microwave for 1 minute.
- heat oil in frying pan.
- in heated tortillas layer meat, saurkraut and cheese.
- roll like a burrito.
- fry on both sides in oiled pan until brown and cheese is melted.
- serve with plenty of dressing on the side for dipping.
- you can also add a bit of dressing in the tortilla while heating if you'd like.

- In a small bowl, beat the cream cheese, mustard and horseradish until blended. Spread a heaping tablespoonful of cream cheese mixture over each tortilla. , Layer each tortilla with eight slices of corned beef, three slices of cheese, another heaping tablespoonful of cream cheese mixture and 1/2 cup sauerkraut. Roll up tightly. Chill for 1 hour. Cut each roll-up into 1/2-in. slices.

REUBEN SANDWICH II
These sandwiches are really delicious and easy to make. They are one of my family's fix-it-quick favorites. I like to serve them with big bowls of steaming vegetable soup and dill pickles on the side. Enjoy!

Steps:
- Preheat a large skillet or griddle on medium heat.
- Lightly butter one side of bread slices. Spread non-buttered sides with Thousand Island dressing. On 4 bread slices, layer 1 slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut and second slice of Swiss cheese. Top with remaining bread slices, buttered sides out.
- Grill sandwiches until both sides are golden brown, about 5 minutes per side. Serve hot.

REUBEN QUESADILLAS

- Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the onion, season with 1/2 teaspoon each salt and pepper and cook, stirring, until tender and golden, 10 to 12 minutes. Add the corned beef and cook until browned and heated through, 3 to 4 minutes. Transfer the onion and corned beef to a bowl. Wipe out the skillet with a paper towel.
- Make the dressing: Combine the diced pickle, mayonnaise, ketchup, Worcestershire sauce and 1 teaspoon mustard in a medium bowl; season with salt and pepper. Lay the tortillas on a work surface. Spread 1 to 2 teaspoons of the dressing in a thin layer over one half of each tortilla. Spread 1 teaspoon mustard over the other half of each tortilla. Divide the onion and corned beef, sauerkraut and cheese among the tortillas on one side; fold the other half over.
- Heat 1/2 tablespoon butter in a large nonstick skillet over medium heat. Add 2 quesadillas, then reduce the heat to medium low and cook until golden brown and crisp, about 3 minutes per side. Remove to a cutting board. Repeat with the remaining 1/2 tablespoon butter and 2 quesadillas.
- Slice the quesadillas into wedges. Serve with pickles and the remaining dressing for dipping.
