COOL AND CREAMY RASPBERRY DELIGHT

I knew that this cool, fruit and creamy dessert was a winner the first time I tasted it. I confirmed that fact a few summers ago when I entered the recipe in a contest at work-it won first place. Co-workers still call to request it. -Mary Olson, Albany, Oregon

Cool and Creamy Raspberry Delight image

Steps:

  • Preheat oven to 300° In a large bowl, mix flour and sugar; cut in butter until crumbly. Press onto bottom of an ungreased 13x9-in. pan. Bake until set, 20-25 minutes (crust will not brown). Cool completely on a wire rack., Beat first four filling ingredients until smooth. Fold in whipped topping; spread over crust. , For topping, add boiling water to gelatin; stir 2 minutes to completely dissolve. Add raspberries; stir until blended. Refrigerate until mixture begins to thicken, about 20 minutes. Spoon over filling. Refrigerate until set. If desired, serve with additional whipped topping.

2 cups boiling water
2 packages (3 ounces each) raspberry gelatin
2 packages (10 ounces each) frozen sweetened raspberries or sliced strawberries
Additional whipped topping, optional

These attractive bars have a rich buttery crust holding the sweet jam topping. They're a big favorite on my Christmas cookie trays.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks. Gradually add flour and mix well. Stir in the pecans. , Spread half into a lightly greased 13-in. x 9-in. baking pan. Top with jam. Drop remaining dough by teaspoonfuls over jam. , Bake at 350° for 25-30 minutes or until top is golden brown. Cool on a wire rack. Cut into bars.

Steps:

  • 1. Preheat oven to 350 degrees and grease a 9x13 casserole dish.
  • 2. Brown ground beef with onions. Drain. Wipe out the skillet. Put the beef and onions back in the skillet along with the spaghetti sauce, mushrooms, garlic, and Italian seasoning. Simmer for 5-6 minutes.
  • 3. Cook pasta according to package directions (I like to cook mine al dente). Drain pasta and put it into the casserole dish.
  • 4. Mix the cream cheese and sour cream in a small bowl.
  • 5. Spread this over the pasta.
  • 6. Then spread the meat sauce on top of the cream cheese mixture.
  • 7. Sprinkle with mozzarella cheese.
  • 8. Bake at 350 for 20-25 minutes or until cheese is melted and bubbly.

1 lb ground beef
1 small onion, diced
2 1/2 c spaghetti sauce (24 oz jar)
1 can(s) mushrooms, drained (6.5 oz)
1 clove garlic, minced
1 tsp Italian seasoning
12 oz pasta of choice (elbow, rotini, or egg noodles)
6 oz cream cheese, room temperature
1 c sour cream
8 oz shredded mozzarella cheese

  • Press into 9 x 13-inch baking pan.

Baked Crab Popper Delights image

Steps:

  • 1. Heat oven to 425 degrees. Spray cups of a mini-muffin pan with non-stick cooking spray. Sprinkle cups with 1/2 cup of the bread crumbs, gently tapping and rotating to coat.
  • 2. Finely chop bell pepper. Blot peppers dry with a paper towel. Finely chop onion tops setting aside 1 teaspoon for garnish.
  • 3. Combine corn, bell pepper, remaining green onions, crabmeat, 1/2 of the mayonnaise, egg, black pepper, and salt. Mix well but gently to not break up the crabmeat too much. Sprinkle lightly with remaining Panko crumbs.
  • 4. Divide mixture evenly among cups of pan. Bake 10 minutes or until golden brown. Remove pan from the oven. Cool in pan 2 minutes and then remove from pan to cooling rack.
  • 5. Meanwhile juice lemon for the sauce. Combine juice, cayenne pepper, and remaining mayonnaise. Mix well. Brush tops of crab cakes with sauce.
  • 6. Top with reserved finely chopped green onion tops.
