Shrimp Scampi with Linguini image

Steps:

  • For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta.
  • Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

Shrimp Scampi and Pasta with Herb Breadcrumbs image

Steps:

  • Bring a 6- to 8-quart soup pot of generously salted water to a boil.
  • For the topping: In a large stainless steel skillet, heat the butter over medium heat until melted and slightly browned but not burned. Add the breadcrumbs. Using a wooden spoon, stir the breadcrumbs to coat with the brown butter, and toast until golden brown, 2 to 3 minutes. Remove from the heat. Stir in the chives, oregano and lemon zest. Season to taste and set aside.
  • For the pasta: Meanwhile, heat the oil in a large saute pan over high heat until shimmering. Season the shrimp all over with salt and pepper. Add the shrimp to the pan in one layer and cook for 1 minute. Turn and cook 1 more minute. Using a slotted spoon, transfer the shrimp to a bowl.
  • Add the garlic and shallot to the pan and cook for 1 minute. Add the wine, lemon juice, pepper flakes and oregano and simmer for 3 minutes. Whisk in the butter piece by piece, thoroughly incorporating each piece before adding the next. Taste and season with additional salt and pepper as needed. Add the shrimp back to the pan and simmer until completely cooked through, about 2 minutes. Stir in the parsley. Remove the skillet from the heat.
  • Add the capellini to the boiling water and cook until just tender, about 4 minutes. Reserve 1 cup of the cooking water and transfer the capellini to a colander to drain. Toss the capellini with the shrimp and parsley, adding some of the pasta water if necessary to keep it moist. Transfer to a large serving bowl or into small bowls as individual servings.
  • Top with herb breadcrumbs.

Classic Shrimp Scampi image

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
  • Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and red pepper flakes and cook until the garlic is just golden, 30 seconds to 1 minute. Add the shrimp and cook, stirring occasionally, until pink and just cooked through, 1 to 2 minutes per side. Remove the shrimp to a plate. Add the wine and lemon juice to the skillet and simmer until slightly reduced, 2 minutes.
  • Return the shrimp and any juices from the plate to the skillet along with the linguine, butter and 1/2 cup of the reserved cooking water. Continue to cook, tossing, until the butter is melted and the shrimp is hot, about 2 minutes, adding more of the reserved cooking water as needed. Season with salt; stir in the parsley. Serve with lemon wedges.

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

Steps:

  • 1. This recipe cooks up quickly. It is best to have all ingredients measured out before you begin cooking.
  • 2. Begin heating the salted water and cook your pasta to al'dente while cooking the sauce and shrimp. Return pasta to the pan you cooked it in and put the lid on it until you are ready to pour the sauce and shrimp over it.
  • 3. In a large skillet on med-high heat, add olive oil, crushed red pepper, and butter. Once butter is melted, add garlic and onion. Cook until onion is translucent.
  • 4. Add 1/2 cup chicken stock, Old Bay seasoning, granulated garlic, granulated onion, salt, and pepper. Bring sauce to a simmer.
  • 5. Once simmering, add shrimp and lemon juice. Cook until the shrimp begins to turn pink. Stirring occasionally.
  • 6. If the sauce has thickened too much, add reserved 1/2 cup chicken stock a little at a time until you have reached your desired consistency. (Sauce should be runny because the pasta will soak most of it up. You want the pasta to be moist, not dry.)
  • 7. Turn off heat and add Romano cheese. Stir to combine then immediately pour mixture over pasta and add parsley.
  • 8. Drizzle with olive oil (approx. 1/4 cup or less). Toss well to combine, using tongs or two wooden spoons. Place lid on pasta and let it sit for 5-10 minutes.
  • 9. Pour mixture into a serving dish, so everything on the bottom of the pan is now on top in the serving dish. Mix again if needed. Sprinkle the reserved 2-Tbs of parsley and Romano cheese over the top for garnish. Serve immediately.

1 lb spaghetti
1 lb raw shrimp (cleaned and deveined)
3 Tbsp minced fresh garlic packed into the tablespoon, approx 15 to 20 cloves depending on size.. (add more or less to your taste)
3 Tbsp olive oil
1/4 c fresh squeezed lemon juiced. (add more if you like it more lemony)
2 tsp crushed red pepper flakes (more if you like it spicy))
1 stick butter
1 Tbsp old bay seasoning
1/2 medium onion, minced
1/2 Tbsp course salt (more or less to taste)
1/4 Tbsp fresh ground black pepper. (more or less to taste)
1 c chicken stock, divided. (not chicken broth)
1/4 c chopped fresh parsley. (reserve 2-tbs for garnish)
1/2 tsp granulated garlic
1/2 tsp granulated onion
1/4 c romano cheese
olive oil for drizzling.
additional romano cheese for garnish.
OPTIONS
if you like it spicy - double the red pepper flakes and old bay seasoning.
if you are a garlic lover like me - add more garlic.

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes.
