Steps:

  • To make the grits, I use a rice cooker. I put the grits and water in the rice cooker with a pinch of salt, and push the button. Once the grits are cooked, season to taste with more salt and pepper, and stir in the cheese, butter, and heavy cream. Keep the grits warm in the rice cooker or the pan.

Steps:

  • In a medium bowl, combine cream cheese, egg yolk, and pancake mix, whisk using a hand mixer until fully combined.
  • Add heavy cream in two parts, whisking well in between.
  • In a separate bowl, whisk egg whites until firm peaks form, then add granulated sugar in three parts, whisking well in between.
  • Gently fold egg whites into pancake mixture in three parts and stir until fully incorporated.
  • Grease rice cooker bowl with melted butter and add cheese cake mixture. Cook for 70 minutes.
  • Once cooked turn the cake out onto a plate, splinkle with powder suger.
  • Enjoy!

I first tasted grits as an adult and was underwhelmed. But I really started to enjoy them with added ingredients, so I started thinking of how to improve them for breakfast. I realized that I had also disliked oatmeal made with water, so taking a cue from my mother, I prepared them with milk. I really liked the results, but not the cooking of them. So I threw everything into the rice cooker - yummy grits with no fuss. This recipe can be doubled readily.

Steps:

  • Place the milk, water, and salt into a large, heavy-bottomed pot over medium-high heat and bring to a boil. Once the milk mixture comes to a boil, gradually add the cornmeal while continually whisking. Once all of the cornmeal has been incorporated, decrease the heat to low and cover. Remove lid and whisk frequently, every 3 to 4 minutes, to prevent grits from sticking or forming lumps; make sure to get into corners of pot when whisking. Cook for 20 to 25 minutes or until mixture is creamy.
  • Remove from the heat, add the pepper and butter, and whisk to combine. Once the butter is melted, gradually whisk in the cheese a little at a time. Serve immediately.

  • Mix together the water, grits and salt in the bowl of the rice cooker. Close the cover and click "White Rice" setting. The grits are done when the rice cooker switches to the "Warm" setting, about 30 minutes.
  • Turn OFF the rice cooker, open the lid and stir the grits while scraping the bottom. Stir in the butter until completely melted, then add in the cooked sausage and cheese (all while keeping the bowl inside the rice cooker).
  • In a separate bowl, beat together the eggs and milk. Stir into the grits in the rice cooker. Cover again and press the "Quick Cook" setting. In about 15 minutes, the setting will automatically switch to "Warm". Turn the rice cooker OFF, open the lid and stir. Close the lid and cook on the "Quick Cook" setting for one more cycle. When the rice cooker automatically switches to "Warm" again, turn the rice cooker OFF, open the lid and serve immediately.
