BASMATI RICE WITH LENTILS

We eat this very nutritious rice dish a lot and frequently serve it to our guests. It is almost a meal in itself, and may be served simply with Karhi, a yogurt sauce, and any vegetable you like.

Basmati Rice with Lentils image

Steps:

  • Soak the lentils in warm water for 3-5 hours. Drain.
  • Wash the rice in several changes of water. Drain. Soak in fresh water for 30 minutes. Drain.
  • Pour the oil into a heavy, medium pan (that has a tight-fitting lid) and set over medium-high heat. When hot, put in the cinnamon, cardamom, and bay leaves. Stir for 10 seconds. Put in the onions. Stir and fry until they turn reddish brown. Add the lentils, rice, and salt. Turn heat to medium and sauté rice very gently for a minute. Add 3 cups water and bring to a boil. Cover tightly, turn heat to very, very low, and cook gently for 25 minutes.

1/2 cup lentils
2 cups basmati rice
3 tablespoons olive or canola oil
Two 2-inch cinnamon sticks
8 cardamom pods
2 bay leaves
1/2 medium onion, cut into fine half rings
1 1/2 teaspoons salt

This is my version of Rice & Lentils, after adding things over the years. I love this stuff and my husband is polite about it.:) It is not a pretty dish, but it is healthy comfort food at it's best! I am a slow prep person, this may go much faster for you. ;)

Rice & Lentils With a Twist image

Steps:

  • Peel and chop sweet potatoes and apples into chunks, and put in a large bowl.
  • Peel and chop onions.
  • Rinse and check lentils and put in a large dutch oven. Add enough cold water to reach 2 inches above the lentils. Set in pan over high heat.
  • While water is warming add paprika, cayenne pepper, cardamom, and cumin.
  • Put oil in a frying pan, over medium heat, and add chopped onions. Add cloves, allspice, cinnamon, and ginger. Heat until onions are soft and spices are fragrant.
  • When water comes to boil in dutch oven, add red rice and stir. Let boil while the onions are cooking. When onions are finished add to dutch oven along with sweet potatoes and apples. Reduce to medium heat and cover, stirring occasionally. If you need more water(and you will) boil it first to keep cooking temperature steady.
  • Cook about 30 minutes more or until sweet potatoes and apples are very soft.
  • Garnish with yogurt or sour cream.

turkish yogurt or sour cream
