SAVORY SWISS STEAK
I don't remember where this recipe originally came from, but it's been a keeper. It's easy to do and is delicious! Hope y'all enjoy it!

Steps:
- 1. Mix flour and mustard. Dredge steak in flour mixture and pound in with a cleated meat mallet. Cut pounded steak into serving size pieces.
- 2. Heat oil in heavy frying pan over medium-high heat. Add meat and brown on both sides. Transfer to crock pot.
- 3. Add tomatoes with liquid, onions, celery, carrots, Worcestershire and sugar to meat. Season to taste with salt and pepper. Cover and cook on high for about 3 to 4 hours or until meat is tender. Serve with rice or potatoes and your favorite veggies.
- 4. NOTE: You may also do this in the oven. Once meat has been browned, place in a shallow baking dish, add tomatoes and remaining ingredients, salt & pepper to taste. Cover and bake at 350 degrees for about 1 1/2 to 2 hours or until meat is tender when pierced.
RICH AND SAVORY SWISS STEAK
I have amp'd up the flavor from the classic tomato and onion recipe we are all used to.

- mix salt, pepper and garlic powder together and season the cube steaks. Dredge in flour and place in heated skillet with oil. brown on both side and remove.
- add onion and garlic to skillet and cook briefly then add tomatoes, beef broth, onion soup mix and tomato paste. bring to a simmer and add cube steaks back to the sauce. reduce heat, cover and simmer for 1 to 1 1/2 hours. stir occasionally
- Serve with mashed potatoes or rice.
SWISS STEAK WITH MUSHROOMS AND RED WINE

- Rub the steak all over with the garlic clove. Using a tenderizing mallet, the back edge of a cleaver or the edge of a heavy plate, pound into both sides of the steak as much of the seasoned flour as it will hold.
- Heat the oil in a large skillet, brown the steak on both sides and remove to a suitable covered baking dish. Pre-heat oven to 300 degrees.
- Add onion to the skillet and cook, stirring often, until lightly browned. Add mushrooms and cook, stirring, until lightly browned. Add tomato puree, Cognac, wine, stock, thyme, savory, marjoram, bay leaf, salt and pepper, and bring to a boil. Pour mixture over steak, cover and bake 2 hours or until very tender.
- Carefully remove steak to a deep serving platter. Skim surface fat from the sauce in the baking dish, check seasonings and pour around steak. Pass any extra sauce at the table. Serve with mashed potatoes.

SAVORY SWISS STEAK
Have you ever had cube steak (or round steak) sitting in your freezer and had absolutely no idea how you were going to prepare it differently than usual? This was my dilemma until I came across this recipe by Marilyn Moll of Urban Homemaker in a cookbook my friend Shannon kindly printed off for me. Marilyn describes it best: "Vegetables thicken the sauce-like gravy which smothers fork-tender steak." It is important to peel and grate your carrots and finely chop your onion and celery for the gravy to form properly. I also tend to double the amount of flour/mustard mixture that I dredge my round or cube steaks in to be sure that they are well coated. I serve this with cheddar and roasted garlic mashed potatoes.

Steps:
- Cut round steak or cube steak into 6 or more serving size pieces.
- Salt and pepper steak pieces.
- Combine flour and dried mustard; then coat steak pieces with flour mixture.
- Using a large frying pan, brown the meat in 1 tablespoon of oil and 1 tablespoon of butter.
- Transfer to a crock pot.
- Heat remaining oil and butter in the same frying pan.
- Add onion, carrots, and celery. Saute until vegetables are glazed.
- Add tomatoes, Worcestershire, and sugar. Heat, scraping up drippings from bottom of pan.
- Pour vegetable mixture over the meat in the crock pot.
- Cover and cook on low for 6-8 hours, or until tender.
- Serve meat with vegetable sauce over top. Sprinkle with chopped parsley as garnish, if desired.
- Note: I won't claim that this is the most beautiful looking dish in the world but even the kids loved it once they got past their initial wrinkled nose inspections. It sure does smell good while cooking though.

- Prep Beef: Trim any excess fat from beef, and cut into round slices about 1/2 inch thick. Pat dry with paper towels. Stir together all dry seasonings in small bowl until well-mixed. Add sliced beef and dry seasonings to resealable bag, and toss until beef is well-coated.
- Brown Beef: Heat olive oil in dutch oven or pot (Note 2) over medium to medium-high heat for a few minutes until hot. Working in two batches, add beef slices in single layer and brown for about a minute, flip and brown other side, then transfer to large bowl.
- Add Vegetables: Add onions, carrots, celery, and garlic to now-empty pot. Cook for a few minutes until aromatic, stirring frequently. Add diced tomatoes (including liquid in can), Worcestershire sauce, and 2/3 cup water. Stir together until well-mixed. Return beef slices and any bowl drippings to pot, snugly arranging beef on top of vegetables. Evenly distribute mushrooms on top.
- Slow Cook: Cover with tightly fitting lid. Cook over medium-low heat for 2 hours, or until beef is very tender and nearly falling apart.

- 1. Cut the round steak into 3-inch squares (approximately). Pound the squares on both sides until they are about half of their original thickness. I recommend a metal meat pounder, and using the side with the sharp projections. Pounding the meat will not only make it much more tender, but it will also release the flavor of the meat into the gravy.
- 2. Combine the flour, salt, and pepper, mixing well. Pat this mixture into both sides of the pounded meat.
- 3. Melt 3 tablespoons of the fat in a large frying pan, preferably cast iron, over medium heat. When the fat is hot and bubbly, brown the floured round steak slices on both sides, being careful not to burn them. The slices should be a golden brown color, not black. You may have to do this in batches, as the pieces should not touch each other while browning. Remove the meat from the pan when it is browned.
- 4. Add the last tablespoon of fat to the drippings still in the pan, and melt it over medium heat. Add the onions and mushrooms, and brown them until they are nicely browned but not burned, about 5 to 10 minutes.
