- Preheat oven to 350°. Whisk together first 4 ingredients. In another bowl, whisk milk and mayonnaise until blended; add to dry ingredients, stirring just until moistened (batter will be thick)., Spoon 1/4 cup mixture into each of 12 greased or paper-lined muffin cups. Bake until golden brown, 25-30 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.

- Preheat oven to 400 degrees.
- Grease one 12-cup muffin pan (2&1/2-inch size).
- In large bowl combine flour, sugar and baking powder.
- Cut butter into thin slices and add to dry mixture.
- Using a pastry cutter or low speed of your mixer, combine the butter with the dry mixture until it resembles coarse crumbs.
- Stir in milk, with a spoon or fork.
- Stirring only until flour mixture is moistened.
- Batter will be thick and lumpy.
- Spoon into muffin cups, dividing evenly between all 12 cups.
- Bake for 20 minutes or until tops are golden brown.
- When done, remove from muffin pan immediately.

RICH AND BUTTERY CORN MUFFINS
Made with plenty of melted butter and sour cream, these golden, lightly sweet corn muffins are moist, rich and delicately crumbly. If you can find coarsely ground cornmeal (as opposed the fine stuff that's on most supermarket shelves), you'll also get deep corn flavor and a pleasantly grainy texture. Serve these warm from the oven, slathered with even more butter, or halved and toasted under the broiler to crisp the surface. They'll even keep for a few days if you store them in the fridge, and freeze perfectly for up to a month.

- Heat oven to 400 degrees, and generously butter the cups and tops of a muffin tin. (The muffins will overflow, and those crisp edges are delicious.)
- In a large bowl, whisk together cornmeal, flour, granulated sugar, baking powder, salt and baking soda.
- In a separate bowl, whisk together melted butter, sour cream, milk and eggs. Fold butter mixture into dry ingredients, then scoop batter into muffin tin (it will be very full). Sprinkle each muffin top with Demerara sugar.
- Bake until golden on the edges, 18 to 22 minutes. Cool on a wire rack for 10 minutes, then remove from muffin tin and cool to room temperature. Serve with even more butter.
RICH TEA BISCUITS
Found this recipe in Jean Pare's "Company's Coming" cookbook. I've made baking powder biscuits before, but not with cream of tarter in the recipe.

- Put first 5 ingredients in bowl.
- Stir thoroughly.
- Cut in butter until crumbly.
- Pour in milk.
- Stir quickly to combine.
- Dough should be soft.
- Turn out on lightly floured surface.
- Knead gently 8-10 times.
- Roll or pat 1/2 to 3/4 inch thick or half the thickness you want the baked product to be.
- Cut with small round cookie cutter.
- Place on greased cookie sheet close together for soft sides or apart for crisp sides.
- Bake in 450 degrees oven for 12 to 15 minutes.
- Brushing biscuits with milk before baking will produce a pretty brown top.
- Makes 10.
