RIGGIES WITH ROASTED VEGETABLE AND RICOTTA SAUCE

- Preheat the oven to 400 degrees F.
- Cut off the end of the bulb of garlic, exposing all of the cloves, and drizzle with 2 tablespoons of the EVOO and season with salt and pepper. Wrap the bulb in foil to form a pouch, and roast until soft and sweet, 40 to 45 minutes.
- Drizzle 4 tablespoons of the EVOO on a nonstick baking sheet. Halve the eggplant and score with sharp paring knife to crosshatch the flesh. Season with salt and pepper and set into the oil, with the skin-side up. Roast until tender, 30 minutes, and then cool to handle.
- Char the red pepper over open flame on the stovetop or under the broiler. Cool in a covered bowl to handle, then peel and seed.
- Heat 2 tablespoons EVOO, 2 turns of the pan, in small Dutch oven over medium heat, add the onions and some salt and pepper and cook, partially covered, 10 to 12 minutes. Add the tomatoes and the basil. Break up the tomatoes and simmer 25 to 30 minutes over low heat.
- Heat a pot of water to boil. Cook the pasta until a little shy of al dente, 5 to 6 minutes. Reserve 1/2 cup of the starchy cooking water.
- Scrape the eggplant away from skin into the food processor. Squish the garlic away from the skins and add to processor along with tomatoes and onions, ricotta and roasted peppers. Puree the sauce until smooth and creamy.
- Drain the pasta and pour back into the hot pot. Add the sauce and the reserved pasta water. Toss to combine and adjust the seasoning. Pour into a casserole dish, top with the Parmigiano-Reggiano and pecorino. Cool completely and store in the refrigerator for a make-ahead meal.
- To serve, bring the casserole to room temp and bake at 375 degrees F until brown and bubbly.
SAUSAGE AND BUTTERNUT RIGGIES

- Defrost the squash puree in a microwave and place in a strainer to drain.
- Cook the pasta in boiling salted water to al dente, 7 to 8 minutes.
- Meanwhile, heat the EVOO in a large skillet over medium-high heat. Add the sausage to the skillet, crumble and brown. Add the garlic, onions and thyme and cook until tender, 5 to 6 minutes. Deglaze the pan with the white wine.
- Preheat the broiler with a rack in the upper third of the oven.
- Melt the butter in a medium sauce pot over medium heat. Whisk in the flour for 1 minute. Whisk in the milk and season with salt, pepper and nutmeg and thicken to coat a spoon. Stir in the butternut squash and bring the sauce back to a bubble and melt in the Cheddar.
- Toss the pasta, sauce and sausage to combine. Top with the Pecorino Romano and parsley and broil to brown, 1 to 2 minutes. Serve with the Fennel and Celery Slaw.
- Combine the honey, vinegar and shallot with the lemon juice and whisk in the EVOO. Add the parsley, celery and fennel and toss to coat and combine. Season with salt and pepper. Arrange on a platter and top with the toasted nuts.
CHEESY BAKED PASTA WITH SAUSAGE AND RICOTTA
Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

- Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
- Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
- Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
- Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.
RICOTTA-PESTO PASTA WITH SAUSAGE AND KALE

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally, for about 9 minutes (pasta will not be fully cooked.) Drain, reserving 1/2 cup cooking water. Set aside.
- While pasta is cooking, place sausage in a large skillet over medium-high heat; cook and stir until browned and crumbly, 5 to 7 minutes. Remove sausage to a paper towel-lined plate and leave grease in the pan.
- Add oil to the skillet and saute for 5 minutes. Add garlic and cook for 1 minutes. Add kale, nutmeg, pepper flakes, salt, and pepper. Deglaze the pan with white wine and cook until kale is soft, 5 to 10 more minutes.
- Return sausage back to the pan. Add ricotta, pesto, and 6 ounces mozzarella cheese. Add reserved pasta and cooking water. Taste and season with salt and pepper if needed. Pour into the prepared casserole dish and sprinkle remaining mozzarella over top. Cover with foil.
- Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes. Let cool 10 minutes before serving.

- Bring large pot of water to a boil for rigatoni. Preheat broiler. Arrange tomatoes on baking sheet. Drizzle with olive oil, salt and pepper, toss. Place under broiler and char until they burst. Heat deep skillet over med high heat, add olive oil. Add sausage, brown. Add onion and garlic, season with salt and pepper, stir for a few minutes. Deglaze with vermouth. Add kale to pan to wilt. Add charred tomatoes crushing as you put them in to sauce. Cook pasta. Reserve a mug of cooking water. Drain pasta, toss with sauce and cooking water. Place in bowl, top with ricotta, drizzle with olive oil, shred Parmesan cheese on top and serve.
KALE OR SPIGARELLO SALAD RECIPE

- Place the currants in a small microwaveable safe bowl; add the vinegar and Sriracha and microwave for 20 seconds on high, then remove and place in a salad bowl to cool. When cool, add 4 Tbsp of the olive oil, the lemon zest, lemon juice, capers, and salt and whisk together to form a light dressing. Add the Spigarello and toss with the vinaigrette to coat well. Add the pine nuts and let stand at room temperature, for 10 minutes. In a ten inch nonstick pan, heat the remaining 2 Tbsp olive oil over medium heat. Crack the eggs into the pan and cook slowly, the way you like them. Sunny side up is best. Season the eggs with salt and pepper and sprinkle the yolks with the parmigiano. - In a large bowl or dish, combine sherry, oil, garlic and oregano. Add chicken and turn to coat. Refrigerate 1 hour., Drain chicken, discarding marinade. Heat a Dutch oven over medium-high heat.
