Steps:

1. Mix Cool Whip, sour cream, sugar, and lemon juice together. Add the bananas, pineapple, pecans, and cherries.
2. To serve as a chilled salad, chill overnight. To serve as a frozen salad, place salad in freezer until firm. Use a 9 x 13" pan. Delish!

2 oz 9 oz. containers cool whip
1 c sour cream
1 1/2 c sugar
2 Tbsp lemon juice
3 bananas, mashed
1 lb can crushed pineapple, drained
1 c pecans, chopped
1/2 c maraschino cherries

RIPE BANANA--SNOWBALL SALAD

I was searching for something to do with my over-ripened bananas and came across this one from my husband's Oklahoman grandmother (one of the few dessert salads from Texhoma that doesn't involve jell-o!). I ended up making something else, but am collecting and freezing bananas to try this one. It looks tasty and super simple. Cook time is freezing.

In a large bowl, beat the cream cheese and sugar until smooth. Stir in pineapple, strawberries and bananas. Fold in the whipped topping, walnuts and food coloring if desired. , Pour into an oiled 13x9-in. dish. Cover and freeze until firm, at least 3 hours. , Remove from the freezer 30 minutes before serving.

Steps:

Combine pineapple juice, sugar, lemon juice, and cornstarch in a saucepan over medium heat; cook and stir until sugar dissolves and sauce is smooth, about 5 minutes.
Stir about 1 tablespoon sauce into the bowl with the egg until egg is slightly warmed. Slowly pour egg mixture into sauce, whisking until sauce is smooth and thickened. Remove saucepan from heat and freeze sauce, stirring occasionally, until completely chilled, about 15 minutes.
Mix bananas, cream cheese, and pineapple together in a bowl. Add sauce and mix until evenly coated.
