ROASTED ROOT VEG TRAYBAKE

Try this great veggie midweek meal with nuts, feta and mixed roots of your choosing, plus a lemon and herb dressing. Leave out the feta to make it vegan

Steps:

  • Heat oven to 200C/180C fan/gas 5. Tip the roots, potatoes and garlic cloves into a large roasting tin. Nestle the herbs in amongst them, then drizzle with olive oil and toss, so everything is well coated. Season and roast for 50 mins, or until all the vegetables are tender.
  • Squeeze the roasted garlic out of its skin and blitz with the rest of the dressing ingredients. Alternatively, you can whisk these together in a small bowl. Toss the roots in the dressing, scatter over the nuts, feta and serve.

1kg mixed roots - we used carrots, parsnips and swede - cut into batons and halved
220g new potatoes , halved
3 garlic cloves , skin left on

50g pack mixed snacking nuts or seeds
45g vegetarian feta
2 tbsp olive oil
1 small pack parsley , finely chopped
1 lemon , juiced

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Whisk the soy, syrup, wasabi and sesame seeds in a small bowl.
  • Put all the greens in a shallow baking tray and toss with 4 tbsp water. Put in the oven and cook for 10 mins until all the water has evaporated. Meanwhile, pour boiling water from the kettle over the noodles in a heatproof bowl to cover, then leave to soak while you finish off the traybake.
  • Once the greens are tender, drizzle over half the soy dressing with another 1 tbsp water and half the spring onions, and toss well. Place the sea bass on top, skin-side up, and pour over the reserved soy dressing. Sprinkle a pinch more sesame seeds over the skins. Cook for 5-6 mins until the fish is cooked through and flaking.
  • Drain the rice noodles, then tip into one side of the tray and coat in some of the sauce. Drizzle over some extra soy, if you like, before scattering with the remaining spring onions to serve.

  • Heat the oven to 180°C/160°C fan/gas 4. Put the potatoes in a pan with salted water, bring to the boil, then cook for 15-25 minutes until tender.
  • Drain, then leave in the colander for a few moments to steam dry. Tip the potatoes onto a board, then give them a bash with a heavy object (I use the base of the pan I cooked them in). Don’t mash them, just bash flatter, exposing the flesh to maximise their crisping potential.
  • Trickle half the olive oil into a large roasting tray. Distribute the potatoes evenly on the tray. Scatter over the zest, fennel seeds and garlic, then season with salt and pepper. Trickle over the remaining oil, then roast for 45-60 minutes or until the potatoes are crisp and crunchy.
  • Meanwhile, make the pesto. Set a dry frying pan over a medium heat and toast the sunflower seeds for a few minutes, stirring regularly, until fragrant. Leave to cool, then pulse/ pound to a fairly fine consistency in a mini food processor/pestle and mortar with the garlic, cheese and some salt. Add the basil, then pulse/pound again until well chopped. Gradually pulse/stir in the oil. Once everything is combined with an even texture, check the seasoning, then spoon the pesto into a bowl (or see Make Ahead).
