MANGO-AND-LIME-GLAZED CHICKEN
This sweet-and-sour chicken is served over our Buckwheat-Noodle Salad.

- Heat oven to 450 degrees. Grate zest and squeeze juice from one lime. Puree in food processor with mango, ginger, honey, oil, and salt to taste; mango should not be completely smooth. Reserve 3 tablespoons for Buckwheat-Noodle Salad; set aside remaining glaze.
- Sprinkle chicken, inside and out, with salt and pepper. Puncture two limes; place in chicken cavity, and tie legs together with kitchen twine. Divide butter in half; slip pats under skin on each side of breast.
- Halve remaining two limes, and strew roasting pan with limes, ginger pieces, and lemongrass. Place chicken in pan. Roast in bottom third of oven until chicken begins to brown, about 20 minutes. Baste with pan juices, and generously brush glaze over chicken. Continue to roast, basting and glazing every 10 minutes; cover with foil if chicken starts to burn. After 30 minutes, reduce oven to 350 degrees, and cook about 10 minutes, or until chicken has internal temperature of 185 degrees.
CROCK POT MANGO CHICKEN
We love an easy Crock Pot dinner recipe and this is a delicious one! The chicken is super juicy. Pouring the mildly sweet mango sauce on top adds a lovely flavor to the chicken. There's a hint of curry flavor throughout but it's not overpowering. We loved how it pairs with the mango. A simple meal.

Steps:
- 1. Season the chicken with salt and pepper. Brown on both sides in the oil. Then place at the bottom of the Crock Pot.
- 2. Add the onion and garlic to the pan. Cook until they lightly caramelize.
- 3. Whisk together the mango nectar, curry powder, pepper, and instant bouillon.
- 4. Pour the nectar mix over the chicken and cover with the cooked onions.
- 5. Cover and cook on low for 3-4 hours or until chicken probes to 170F.
- 6. Remove chicken and onion to a platter and keep warm.
- 7. Stir together the corn starch with water until mixed. Then whisk into the liquid in the Crock Pot. Add drained mango fruit.
- 8. Cook uncovered on high, stirring frequently until sauce thickens (15 minutes or so). Add chicken and onion back to the Crock Pot to warm with sauce.
- 9. Garnish with fried onion bits and serve with rice or mashed potatoes.
THE BEST ROASTED CHICKEN
This is the best chicken I have ever made. My husband liked this so much that, because I had leftover potatoes, gravy, and cornbread stuffing, I had to make another chicken.

- Preheat oven to 400 degrees F (200 degrees C).
- Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.
- Loosen skin on chicken breast; rub butter mixture between skin and breast meat. Press on the skin to distribute evenly. Rub oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon pepper all over; place lemon halves inside cavity. Set in a baking pan.
- Roast in the preheated oven, basting after 30 minutes, until chicken is no longer pink, about 1 hour. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Let rest before carving, about 15 minutes.

ROASTED CHICKEN WITH MANGO GLAZE

Steps:
- Preheat oven to 500 degrees.
- Rub chicken with butter and sprinkle with salt.
- Put all other ingredients in a food processor until it has a chunky.
- Place chicken breast-side down in a pan.
- Pour mango marinade over the chicken.
- Put the chicken in the oven.
- Flip chicken breast side up after 20 minutes and baste with marinade.
- After 30 minutes of chicken being in oven, turn oven down to 350.
- Baste chicken every 15 minutes until done.
- Remove and enjoy.
GRILLED RED CHILE BUTTERMILK CHICKEN WITH SPICY MANGO HONEY GLAZE
Steps:
- For the mango honey glaze: Heat the oil in a large high-sided saute pan over medium-high heat. Add the garlic and onions cook until soft, about 4 minutes. Add the mangoes and cook until soft and juicy, stirring occasionally. Add the wine, orange and pineapple juices, 3 tablespoons honey and the chile de arbol and cook, stirring occasionally, about 3 minutes.
- Transfer to a blender and carefully blend until smooth, about 2 minutes. Strain into a bowl, season with salt and pepper and more honey if needed. The mixture should be a thick puree. If too thick, thin with a touch of water. Let cool to room temperature before serving.
- For the chicken: Whisk together the buttermilk, chile powders, coriander, granulated garlic, onion powder, paprika and cinnamon in a large baking dish. Add the chicken and turn to coat. Cover and refrigerate for at least 4 hours and up to 24 hours, turning a few times.
- Remove the chicken from the marinade and pat dry. Place the chicken on a baking rack set over a baking sheet, return to the refrigerator and let sit, uncovered, for at least 1 hour and up to 4 hours.
- Remove the chicken from the refrigerator 30 minutes before grilling. Heat the grill for indirect grilling.
- Brush the chicken on both sides with the oil and sprinkle with salt and pepper. Place on the grill directly over the heat and cook until golden brown, about 5 minutes. Flip the chicken over and continue grilling until the bottom is golden brown. Move to the cooler side of the grill, close the cover and continue grilling until cooked through, about 15 minutes longer. During the last few minutes, brush with some of the mango honey glaze. Remove to a platter and drizzle with more of the glaze.
MANGO GLAZE FOR FISH, CHICKEN, OR PORK
Steps:
- Heat the vinegar in a saucepan over medium heat. Add the sugar and cook until thickened slightly. Add jalapeno, ginger, and mango and continue cooking until softened. Add the lime juice. Transfer to a food processor and puree until smooth. Strain, if necessary. Consistency will be thick and jam-like, but can be thinned to more of a glaze consistency with honey or water.
GRILLED CHICKEN WITH MANGO HABANERO GLAZE
This recipe was created for the Ready Set Cook #8 contest. It's best to make this delicious sweet and spicy glaze ahead of time, and keep it refrigerated until needed. It will make about 1/2 cup. Because it's very hot and spicy, it doesn't take much to glaze the chicken breast. If you have some left over, it can be used like pepper jelly for other uses too. (I doubled the glaze recipe to keep on hand in the fridge.) Habaneros are delicious but extremely spicy. If you want to tone down the heat, use less habanero, or use a milder pepper. Also, use extreme care when mincing the habanero. I use a paper towel wrapped around my fingers, to prevent my fingers from coming in contact with it. If you get it on your fingers, and touch your eye - YOWSA!

- Add the first five ingredients (sugar through cider vinegar) in a medium saucepan. Heat over medium and stir frequently, mashing the mango, until the ingredients are incorporated and begin to boil. Lower the heat to simmer, and let cook slowly for about 10 minutes, stirring occasionally. Squeeze 1 tbsp juice from the orange and add with the rum to the sugar/mango mixture. Stir and simmer gently for 2 - 3 more minutes. Set aside and cool. Refrigerate until ready to use.
- Salt chicken to taste. Grill chicken until nearly finished. Baste chicken with glaze and grill a few more minutes on each side, basting lightly with glaze with each turn until the chicken is done.
- Garnish with chopped cilantro and serve. Reserve and refrigerate extra glaze for future use.

- In a small bowl combine garlic, ginger, turmeric, salt and 1 tablespoon of vegetable oil. Mix together and rub all over chicken thighs. Set aside to marinate for 30 minutes and make the mango sauce.
- Preheat over to 350°F. In an oven proof skillet (I use my cast iron) add the remaining tablespoon of vegetable oil and over medium high heat brown the chicken on both sides. Season with salt and brush with a quarter of the mango sauce.
- Bake for 35 to 40 minutes until golden brown and chicken is cooked through. If it gets too brown before it’s done, cover with aluminum foil and return to the oven. Baste with mango sauce once before removing from oven to caramelize on top. Serve with remaining mango sauce, chopped cilantro on top and side dish of choice.
