Couscous With Pine Nuts and Mint image

Steps:

  • Heat the oil and butter in a large saucepan over medium heat. Add the onion and cook over medium-low heat for 6 to 8 minutes, stirring occasionally, until tender but not browned. Add the stock and bring to a boil. Stir in the couscous, 1 teaspoon salt, and 1/2 teaspoon pepper and remove from the heat. Cover the pot tightly and allow the couscous to steam for 10 minutes. Fluff the couscous with a fork and stir in the mint and pine nuts. Taste for seasonings and add about 1 teaspoon salt, depending on the saltiness of the stock, and 1/2 teaspoon pepper. Serve hot.

3 cups chicken stock, preferably homemade

Steps:

  • In a large mixing bowl whisk together olive oil, vinegar, salt, fresh mint, fennel, pine nuts and za'atar if available. Add couscous and gently incorporate dressing and couscous with a fork. Add pomegranate seeds and again gently fold through but this time with a spoon. Allow salad to remain at room temperature for a half an hour so that flavors can blossom

Steps:

  • Melt the butter in a large saucepan. Add the shallots and cook them over medium-low heat for 3 minutes, until translucent. Add the chicken stock, salt, and pepper and bring to a boil. Turn off the heat. Stir in the couscous, cover the pan, and set aside for 10 minutes. Add the pine nuts, currants, and parsley and fluff with a fork to combine. Serve hot.

Steps:

  • Bring water to a boil.
  • Add couscous, butter and salt.
  • Remove from heat and let stand 5 minutes.
  • Topping: Heat the oil in a shallow pan.
  • Cook"topping" ingredients except parmesan until the garlic becomes golden.
  • Mix the warm topping with the couscous.

Steps:

  • 1. In a large skillet, heat oil over medium heat. Cook garlic for 2 minutes. Add broth and contents of spice sack. Bring just to a boil. Stir in asparagus. Reduce heat; cover and simmer 1 minute.
  • 2. Stir in Near East Couscous; cover and remove from heat. Let stand 5 minutes.
  • 3. Stir in tomatoes and Parmesan cheese

Egyptian Toasted Pine Nut Couscous With Garlic Shrimp image

Steps:

  • Peel, devein and rinse shrimp if needed, and then pat dry.
  • Place shrimp in a large self-sealing plastic bag.
  • Add oil, garlic, tarragon, thyme and Old Bay seasoning and seal bag.
  • Gently turn and 'massage' the bag to coat the shrimp with the marinade.
  • Refrigerate for at least one hour.
  • Prepare the couscous according to the package directions, substituting the chicken broth for the water.
  • Stir the pine nuts and onions into the couscous and set aside.
  • Combine the lemon juice and butter in a bowl, and set aside.
  • Saute the shrimp in a large skillet with the marinade over medium heat for 3 to 5 minutes or until shrimp turns opaque( Do not overcook or the shrimp will be tough).
  • Pour half of the butter over the shrimp.
  • To serve, divide the spinach among individual bowls.
  • Spoon the couscous onto the spinach.
  • Arrange the shrimp on the couscous and pour the remaining lemon butter over everything. Sprinkle with shredded parmesan.

Roasted Cabbage With Parmesan, Walnuts and Anchovies image

Steps:

  • Heat oven to 450 degrees. Cut the cabbage in quarters lengthwise through the core, then cut out the cores and stem. Slice the quarters lengthwise into 1 1/2-inch-thick wedges.
  • Place wedges on a rimmed sheet pan, flat sides down. It's OK if the pan seems a bit crowded; the wedges will shrink as they roast, but try not to overlap them if possible. Lightly drizzle them with oil and season with salt.
  • In a small bowl, combine Parmesan, anchovies, garlic, thyme and black pepper. Stir in 1/2 cup oil to make a loose paste. Massage paste into each cabbage wedge, stuffing the mixture in between the leaves.
  • Lightly drizzle cabbage with a little more oil. Roast until cabbage is lightly browned in spots, 25 to 30 minutes.
  • Remove pan from oven and sprinkle walnuts all over the top of the cabbage. Roast for another 5 minutes or so, until cabbage is tender and caramelized and the walnuts are golden and toasted.
  • Sprinkle cabbage with dill and more Parmesan and black pepper, if you'd like. Serve immediately.
