ROASTED GARLIC BREAD
A very easy recipe for garlic bread that is made with roasted garlic, butter and Parmesan cheese.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Slice the tops off of garlic heads so the tip of each clove is exposed. Place garlic on a baking sheet and drizzle with olive oil. Bake until garlic is soft, about 30 minutes.
- Set the oven to broil. Slice the loaf of bread in half horizontally, and place cut-side up on a baking sheet.
- Squeeze the cloves of garlic from their skins into a medium bowl. Stir in the butter, parsley, and Parmesan cheese until well blended. Spread onto the cut sides of the bread.
- Broil bread until toasted, about 5 minutes.

- In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Freeze option: Securely wrap and freeze cooled loaf in foil and place in resealable plastic freezer bag. To use, thaw at room temperature.

- Heat oven to 425ºF.
- Cut thin slice off top of garlic, exposing tops of all cloves; place on sheet of foil. Drizzle with oil. Wrap in foil. Bake 40 min. or until garlic is very soft. Cool 5 min. Reduce oven temperature to 400ºF.
- Squeeze garlic cloves from skin into small bowl; mash with fork. Add butter; mix well. Stir in cheese; spread onto cut sides of bread. Place, cut-sides up, on baking sheet.
- Bake 18 to 20 min. or until golden brown. Serve warm.

I made this for Christmas, and one of my guests said the carrots were 'off the chain!' The flavor was amazing! The cheese was nicely crusted combined with the carrot and a little garlic! YUM! A nice change from the ordinary green veggie and still healthy!

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Stir olive oil and garlic salt together in a small bowl; pour into a large resealable plastic bag. Add carrots to the plastic bag, seal, and shake to coat carrots completely in oil mixture. Arrange coated carrots onto the prepared baking sheet.
- Roast carrots in preheated oven until crisp-tender, about 45 minutes. Sprinkle 1/4 cup Parmesan cheese over carrots and continue roasting until cheese is lightly browned, 5 to 10 minutes. Garnish with additional Parmesan cheese to serve, according to your taste.

ROASTED GARLIC AND PARMESAN SPREAD
This is an awesome and simple bread spread to use in place of butter or garlic butter. Use light mayonnaise if you want fewer calories. The prep time is almost nothing if you have roasted garlic in the fridge from a previous meal. Spread thinly on bread before toasting in the oven or serve in a bowl for guests to apply to their own bread.

- Take your garlic, and slice off the top of the head, drizzle with olive oil, salt and pepper, and cover completely with aluminum foil. Roast in the oven for 40-50 minutes until softened and roasted. Remove and set aside, keep the oven on and adjust to 350 degrees.
- In the meantime, once your butter has come to room temperature, mix in chopped parsley, shredded parmesan, oregano, chili flakes and salt and pepper, squeeze your roasted garlic in the mixture as well. Mix well until combined and well blended.
- Take your baguette and slice horizontally, and place cut-side up on a baking sheet. Spread on your butter mixture all throughout the bread. Toast in the oven at 350 for about 10-15 minutes until the baguette gets toasty, but not burnt, soft on the inside, and the butter mixture has melted.
