CINNAMON ROASTED NUTS
These are very similar to the cinnamon nuts sold at fairs. I only prepare when I'm having guests because they are seriously ADDICTIVE. But if you have willpower, they also freeze well.

Steps:
- If your nuts are salted, rinse them well, pat dry and place on a cookie sheet in a single layer in a warm (200F) oven. Turn oven OFF and leave to dry overnight. They must be totally dry before proceeding with the recipe. Otherwise, you'll have rubbery nuts.
- Whisk together water, sugar, vanilla and spices in a nonstick dutch oven.
- Cook over medium-low heat, stirring occasionally. It will form a syrup.
- Cook syrup until it spins a thread from end of spoon when spoon is lifted (about 6 - 7 minutes).
- Add the nuts. Stir to coat nuts with syrup. The nuts will clump together in a mass.
- Stir constantly until syrup evaporates and sugar crystallizes on the nut, about 10 minutes. Do not turn up the heat to try to speed it up - you'll just burn it. Keep stirring, they will begin to dry out and will separate.
- Pour out onto a wax paper lined baking sheet. Allow to cool completely. Store in zip top freezer bag.
- To clean the pan: Allow the pan to cool, then add cold water and bring to a boil. Cover and let simmer 10 minutes.

OLD-FASHIONED ROASTED PECANS
My ex-mother-in-law lives in the South and has lots of pecan trees. She sends me bags of shelled pecans every year for Christmas. I found out how they make the roasted pecans at the fair. Even though they use big roasters, these turn out just as great.

ROASTED CINNAMON PECANS
...a close fascimile of Trader Joe's Glazed Cinnamon Pecans. Walnuts are a good substitute for the pecans. Cookgirl has been officially banned from all Trader Joe's on the West Coast. I knew it would happen eventually. I am now forced to wear my Groucho Marx glasses to shop at any Trader Joe's.

CANDIED PECANS RECIPE - (4.3/5)

Steps:
- Mix sugar and cinnamon together. Put nuts and sugar mixture in a nut roaster pan, or any kind of nonstick pan, and a wide paddle spoon can be used. Stir to mix. Combine vanilla and water in a measuring cup. Add the liquid to glaze/nut mixture in the pan. Place the pan on the burner, on medium high heat. The glaze will begin to turn into a thick liquid; boil gently during the process. Stir contents slowly and continuously to keep the glaze coating nuts at all times, until the liquid evaporates and nuts are glazed (5 to 10 minutes). When the liquid is evaporated and the handle (or paddle) becomes harder to stir, the nuts are done. Do not overcook! Remove the pan from burner. Quickly sprinkle a little water over the nuts (about 1 tablespoon per 2 cups of nuts). The mixture will steam, so keep the hands away until the steam dissipates, to prevent burns. Stir nuts to coat even with the glaze. Using a wooden spoon or spatula, immediately spread the hot nuts on a non-stick paper (parchment paper is best) cookie sheet to cool. Gently separate the nuts with a wooden spoon. Nuts will be very hot -- do not eat until cooled (even though they smell delicious and you will find it very difficult to resist!) To store, be sure nuts are thoroughly cooled and then put in airtight containers. Refrigerate to retain freshness or freeze for future use. You can reheat in a microwave by spreading on a flat plate and heating for 2 to 4 minutes. Or, on a non-stick cookie sheet, heat for about 7 minutes at 250°F in a conventional oven.
