ROASTED PEARS WITH BROWN SUGAR AND VANILLA ICE CREAM
I came back from the village with a boxful of pears from my father-in-law's orchard and looked for ways to use them up fast. I found this Giada de Laurentis recipe which I loved.

- Preheat the oven to 400 degrees F.
- Arrange the pears cut side up in an 8-inch square glass baking dish. Whisk the apple juice and sugar in a small heavy saucepan over medium-high heat until the sugar dissolves. Whisk in the butter. Pour the sauce over the pears. Bake until the pears are crisp-tender and beginning to brown, basting occasionally with the juices, about 35 minutes.
- Spoon the pears onto plates. Top with ice cream. Drizzle with any juices and serve.
- The pears can also be served frozen. To do so, cool the pears, then place them in the freezer until frozen solid, about 8 hours.

CARAMELIZED CARDAMOM PEARS WITH ICE CREAM

- Preheat oven to 450°F.
- In a small saucepan melt butter over moderate heat and stir in brown sugar, water, and cardamom until sugar is dissolved. Quarter pear lengthwise and core. Cut each pear quarter in half lengthwise and in an 8-inch square baking pan toss with syrup. Roast pears in middle of oven, turning once, until tender and syrup is caramelized, about 15 minutes.
- Transfer pears with a slotted spoon to 2 plates and stir rum into syrup until combined well. Scoop ice cream onto plates and spoon syrup over it.
ROASTED PEARS AND ICE CREAM

- Preheat oven to 400 degrees F.
- Place the butter in the bottom of a shallow baking dish. Drain off 3/4 of the liquids from each can ¿ pears should remain wet but not swimming in syrup. Add pears to the dish and season with lemon zest, nutmeg and crystallized ginger then roast 20 minutes. Serve warm pears with scoops of French vanilla ice cream on top, garnish with lemon twist.
SUGARED CARDAMOM PEARS

- In a skillet over medium-high heat, add the butter. As the butter melts and begins to foam, add the Bosc pears. Cook for 2 to 3 minutes until they begin to soften. Add the brown sugar and stir to incorporate the sugar mixture, evenly coating the pears. Stir in the salt, cardamom, and vanilla extract, and continue to stir until the liquid becomes syrupy. Transfer to a serving bowl and serve over vanilla ice cream garnished with crystallized ginger.
RIESLING POACHED PEARS WITH CARDAMOM CREAM
Riesling is a white wine native to Germany, though it's now also being grown as far afield as California, New York and Australia. Rieslings can range from sweet (labeled Spatlese or Auslese) to dry (labeled Kabinett, Qualitatswein or QbA); they're all known for honeyed, floral notes and stony minerality. They're an especially good match for fruit, as they add clean, not cloying, sweetness. Cardamom, a common ingredient in Northern European and Scandinavian baking, adds a smoky counterpoint.

- Pour the Riesling into a medium saucepan and whisk in the sugar until it dissolves.
- Peel the pears, leaving stem intact, if present. Remove bottom stem end with a small melon baller, and continue to scoop up into the pear to remove the core. Place the pears right in the Riesling mixture (poaching liquid) after they are peeled and cored to prevent them from discoloring. (The acidity of the wine keeps them from browning). Add just enough water to cover the pears.
- To keep the pears submerged in the poaching liquid, cut a circle of parchment paper the size of the pan and lay on the surface of the liquid. Place a small plate on top of the paper to make sure the pears are completely submerged. Cook the pears over medium-high heat, just until the liquid comes to a boil. Reduce the heat to low and poach the pears until they are just soft. The pears should be tender enough to pierce with a knife. This takes about 20 to 25 minutes for ripe medium pears, but this can vary depending on the size, variety and ripeness of the pear.
- Remove the pan from the heat and cool the fruit completely in the poaching liquid. Refrigerate the fruit in the liquid in a sealed container until ready to serve. (The fruit will hold for 4 to 5 days, the longer the fruit is stored in the poaching liquid, the fuller the flavor).
- Pour about half of the poaching liquid into a skillet and bring to a boil over high heat. Continue to cook and reduce until the liquid gets syrupy and about the consistency of honey.
- Meanwhile, whip the cream together with the sugar and cardamom until cream just holds soft peaks. Refrigerate until ready to serve.
- To serve, place a pear in a bowl or on a plate. Drizzle with reduced Riesling syrup and garnish with a dollop of whipped cream.
HONEY ROASTED PEARS WITH BRANDY VANILLA ICE CREAM
The pears are roasted with spices and honey, they come out with a beautiful golden crust. Even without the ice cream they have a sophisticated flavor and presentation. Adapted from a recipe of Patina Restaurant in Los Angeles.

- For the brandy ice cream:.
- Stir together the ice cream and the brandy until well blended. Freeze until serving time.
- Preheat oven to 350 degrees.
- For the pears:.
- Halve, peel and core pears. Immediately sprinkle with lemon juice to prevent browning. In a large, rimmed baking pan, mix the remaining lemon juice with the butter, honey and vanilla. Stir in the orange and lemon zest, and the spices. With a small, sharp knife, score the rounded part of each pear half diagonally in one direction, then the other, to form a diamond pattern. Place pears cut side down in baking pan. Spoon honey mixture over pears.
- Bake pears 40-45 minutes, basting them with pan juices every 10 minutes or so, until the are very soft when pierced. Place one pear half on each plate and place scoops of ice cream around them. Garnish with the lemon and orange slices.
