ROASTED RADICCHIO

Pair this easy Roasted Radicchio recipe with any one of our delicious mains, or include it in one of our delicious pasta recipes.

Steps:

  • Preheat oven to 400 degrees with rack in the center. In a 10-inch ovenproof skillet, combine 2 tablespoons oil and 2 teaspoons vinegar. Arrange radicchio in the skillet, placing 1 sprig of rosemary underneath and on top of each wedge. Drizzle remaining 1 tablespoon oil and 1 teaspoon vinegar over radicchio. Season with salt. Cover with plastic wrap, and then aluminum foil. Roast until tender and caramelized, 30 to 45 minutes.

1 medium head radicchio (about 10 ounces), cut through the core into 10 wedges
3 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
2 branches fresh rosemary, picked into 20 small sprigs
1/2 teaspoon coarse salt

ROASTED LETTUCE, RADICCHIO, AND ENDIVE

A Sicilian grandmother taught me to make roasted lettuces this way. I like it for a change from serving cold salad. It is healthy and delicious! Most people like it served with crunchy bread. This also works very well with omelets in the morning or for brunch. Leftovers can be easily re-heated in the microwave.

Roasted Lettuce, Radicchio, and Endive image

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with parchment paper.
  • Place radicchio, Belgian endive, chicory, and romaine lettuce halves in a single layer on the baking sheet. Drizzle 2 tablespoons of the olive oil on top.
  • Combine olives and capers in a small bowl. Mix oregano, thyme, salt, black pepper, and chile pepper in a small bowl to make spice mixture.
  • Stuff inner leaves with olives, capers, and spice mixture using your fingers. Wrap halves together with kitchen string to prevent stuffing from falling out. Drizzle remaining 1 tablespoon olive oil on top.
  • Bake in the preheated oven until crispy and beginning to wilt, 10 to 15 minutes. Cut off kitchen string and sprinkle Romano cheese on top before serving.

Roasted Cauliflower and Radicchio Salad image

Steps:

  • Put oven rack in middle position and preheat oven to 450°F.
  • Toss cauliflower with 1/4 cup oil, 1/2 teaspoon salt, and 1/8 teaspoon pepper in a large bowl. Spread in 1 layer in a shallow baking pan (1 inch deep) and roast, turning over with tongs halfway through roasting, until tender and golden brown, 25 to 30 minutes total. Cool in pan on a rack, then transfer to large bowl.
  • Whisk together vinegar, shallot, remaining 1/4 teaspoon salt, and remaining 1/8 teaspoon pepper in a small bowl, then add remaining 5 tablespoons oil in a slow stream, whisking until emulsified. Add half of dressing to cauliflower and toss to coat. Add romaine, radicchio, parsley, half of nuts, and remaining dressing to cauliflower and toss to coat. Season with salt and pepper and sprinkle with remaining nuts.

1/2 cup hazelnuts (2 1/4 ounces), toasted , any loose skins rubbed off in a kitchen towel, and nuts coarsely chopped
