ORZO WITH SPINACH AND TOMATOES

- Pile spinach leaves in stacks 1 on top of the other. Thinly slice stacks of leaves to make spinach confetti. Pile shredded spinach into the bottom of a medium sized mixing bowl. Halve grape or cherry tomatoes with a paring knife and add them to the mixing bowl. Add the zest of 2 lemons to the bowl and save the lemons in the refrigerator to juice for another recipe. Add hot cooked and drained orzo pasta to the mixing bowl. The heat of the pasta will wilt the spinach and warm the tomatoes at the bottom of the bowl and get the juices flowing from veggies. The heat of the pasta will also release the flavor and oils in the lemon zest. Drizzle 1 tablespoon extra-virgin olive oil over the pasta and toss to combine the veggies and orzo. Add basil and salt and pepper and toss to combine. Taste your orzo to adjust seasonings and serve.
FARRO WITH BLISTERED TOMATOES, PESTO AND SPINACH
Here is an Italian-inspired recipe that uses store-bought or homemade pesto to season farro, which is then tossed with fresh spinach, roasted tomatoes, red onions and mozzarella for a complete vegetarian meal. Make it with fresh-from-the-market cherry tomatoes when they're in season, but during the rest of the year, use grape tomatoes, as they tend to be more flavorful than cherry during the colder months. If you'd like, substitute arugula, or cooked broccoli rabe or kale, for the spinach. It tastes delicious warm or cold the next day - and topping it with shrimp, chicken or scallops can make it feel new again. Before reheating, add a bit more spinach, drizzle it with a little olive oil and give it a good stir.

- Heat the oven to 400 degrees. Bring a large covered pot of well-salted water to a boil. Add the farro and adjust the heat to maintain a medium boil. Cook uncovered, stirring occasionally to make sure nothing is sticking to the bottom, until tender and not too chewy, about 30 minutes.
- Meanwhile, on a sheet pan, combine the tomatoes and onion wedges with the oil, making sure everything is well coated and glistening, then season with salt, pepper and the red-pepper flakes. Roast until the tomatoes blister and slightly deflate, 25 to 30 minutes.
- When the farro is done, drain, then pour into a serving bowl or back into the pot. Toss with some olive oil, then mix in the pesto. Add the lemon zest and juice, then stir in the spinach. Set aside to cool slightly.
- Scrape the onions, tomatoes and their juices into the farro; season with salt and pepper as needed. Add the cheese, if using, then garnish with herbs and serve.
ROASTED TOMATO AND SPINACH SALAD
Steps:
- Blanch trimmed asparagus spears for approximately 1-2 minutes and refresh immediately in ice water. Set aside. Cut plum tomatoes in half lengthwise, season with salt and pepper and grill cut side down on hot grill for 2 minutes, turning a quarterturn after 1 minute to make nice crossmarks. Remove and set aside. In a hot saute pan heat olive oil and quickly fry prosciutto on both sides until just crispy. Remove from heat. Wisk together grapeseed oil and white balsalmic vinegar, and toss vinegarette with spinach. Presentation- On each plate place 3 halves of grilled tomato, in a triangular position. Lay two spears of grilled asparagus over tomatoes in a X, this has created a base for the salad. Place a high pile of dressed spinach in the middle of the tomato formation, giving it height. Place a slice of crisp prosciutto carefully standing in front of spinach. Garnish with a few shavings of romano cheese on top of salad.
GREEK ROASTED TOMATO AND SPINACH SALAD
Not your everyday spinach salad! Good things take time and this salad is worth every minute. Serve with grilled meat, chicken or fish and crusty bread for a fantastical dinner! Prep time does not include marination.

- Cut cheese into 1/2 inch thick lenghtwise slices.
- Mix oil, garlic and herbs in a shallow dish, add cheese, cover and marinate 1 to 2 hours.
- Preheat oven to 400°F.
- PLace onions and tomatoes on a baking sheet, drizzle with 2 tbls of the extra virgin olive oil, 1 tbls balsamic vinegar, salt and pepper.
- Bake 30 to 40 minutes or until golden brown.
- Meanwhile, heat a non-stick frying pan over medium heat, drain the cheese and cook for 1 minute each side or until golden brown.
- Divide spinach among 4 serving plates, top with toamatoes and onions.
- Whisk together the remaining oil and vinegar and drizzle over the salad.
- Top with Haloumi and serve.

- To cook the quinoa: Combine the rinsed quinoa and 2 cups water in a medium saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 15 minutes, reducing heat as time goes on to maintain a gentle simmer. Toss again, season to taste with additional salt and pepper, if necessary, and serve immediately.
