Simple Crostini image

Steps:

  • Preheat oven to 350 degrees. Arrange baguette slices on two large rimmed baking sheets; brush both sides with oil, and season with salt and pepper.
  • Bake, rotating sheets halfway through, until golden, 15 to 20 minutes (if undersides are not browning, turn crostini over once during baking). Let cool on baking sheets. Top crostini with desired toppings, and serve.

Steps:

  • Prepare Bob Evans Original Mashed Potatoes by following the recommended microwaving instructions on the package.
  • Mix in 2 Tbsp of prepared horseradish until well combined.
  • Place 6 oz. of Bob Evans Original Mashed Potatoes with horseradish in a martini glass.
  • Top with 2 slices of medium rare roast beef, mounded in the center.
  • Top with 1 oz of au jus.
  • Place 2 Tbsp goat cheese over beef and au jus.
  • Top with 1 tsp. crispy shallots
  • Garnish with fresh snipped chives
