DATE-NUT BALLS
This is one of my very favorite treats to make for the holidays and package up along with some fudge, pecan tarts, and pecan tasties, to give to the neighbors. This way my husband and I can have a few too.

Steps:
- Melt butter in a saucepan over medium heat; cook and stir dates and white sugar in the melted butter until thick and golden brown, 10 to 15 minutes. Remove saucepan from heat and stir in crispy rice cereal and pecans. Let mixture cool until easily handled, 5 to 10 minutes.
- Form mixture into small balls using your hands.
- Pour confectioners' sugar into a resealable bag; add date-nut balls and lightly shake bag until balls are coated.

A friend gave me this recipe more than 30 years ago. It is my husband's favorite treat. I like these with pecans or walnuts. If you do not like nuts, omit the nuts and use 3 cups Rice Krispies. -Melinda Lord, Washington, Iowa

- In a large bowl, combine Rice Krispies and pistachios. In a large saucepan, combine butter, dates and sugar. Cook and stir over medium heat until mixture is combined., Remove from heat. Stir in vanilla. Pour over Rice Krispies mixture; stir to coat. When cool enough to handle, press into 1-1/4-in. balls. Cool. If desired, roll in confectioner's sugar. Store in an airtight container at room temperature.

- In a large bowl, combine cheeses. Shape into 36 balls; roll balls in toppings as desired. Cover and refrigerate for 8 hours or overnight. To serve, if desired, press a rye crisp or rolled corn chip into the top of each cheese ball.

Steps:
- Combine the cream cheese, dates, rosemary and 1/2 cup of the pecans.
- Cover, and chill for 30 minutes.
- After chilling, shape into a ball and roll in the remaining pecans.
- Serve with apple wedges, gingersnaps, or your favorite cracker.

MIXED NUTS WITH ROSEMARY
Steps:
- Preheat oven to 350 degrees F.
- Melt butter with dried rosemary, salt, and cayenne. Pour this mixture over 3 cups mixed nuts, tossing to coat them. Bake the nuts on a cookie sheet for 10 minutes, stirring occasionally.
THE HEAVYSET CHEESE BALL
Steps:
- Preheat oven to 300 degrees F.
- Place and spread all the almonds on a cookie sheet or in a shallow pan, pushing the almonds around until they turn color, about 20 minutes.
- Mix together the cream cheese and the mayonnaise. Add the bacon, salt and pepper, dill, and onion. Chill overnight.
- On a serving platter, make 2 pine cone shapes with the cheese. Begin to press the almonds at a slight angle into the cheese, starting at the narrow end of the pine cone shape.
- Do this in rows, continuing to overlap rows until all the cheese is covered. Garnish with fake sprigs, or real ones, or with rosemary.
- Serve at room temperature and spread on crackers.

CHRISTMAS TREE CHEESE BALL RECIPE BY TASTY
This mini Christmas tree of cheese is guaranteed to get your holiday party started. After shaping the goat cheese mixture into a cone shape, create a pine needle effect using freeze-dried chives. Decorate the cheeseball tree with a pine nut garland, dried cranberry ornaments, and a star-shaped cheddar cracker on top.

- In a large bowl, mix together the goat cheese, pistachios, dried cranberries, orange zest, rosemary, maple syrup, salt, and pepper with a rubber spatula until well-combined. Chill the mixture in the refrigerator for 10-15 minutes before assembling. The cheese mixture can be made up to 1 day ahead. Refrigerate until ready to assemble and serve.
- To assemble, transfer the cheese mixture to a serving platter and, using gloved hands greased with nonstick spray, mold the mixture into a cone shape.
- Using dry hands, gently press the freeze-dried chives onto the cheese cone to adhere, making sure to coat the entire surface.
- Insert pine nuts into the cone in the pattern of a garland. Dot the "tree" with more dried cranberries for "ornaments". Top with the star-shaped cracker.
- Serve with more crackers and crudités.
