This delicious addition to holiday festivities uses an entire box of Nilla Wafers. We keep these on our coffee table during holiday entertaining.

Rum or Bourbon Balls image

Steps:

  • Place chocolate chips into a microwave-safe medium bowl. Heat in the microwave for 1 minute, stir and then continue to heat at 20 second intervals, stirring between each, until melted and smooth. Stir in sugar and corn syrup. Blend in rum. Add crushed vanilla wafers and chopped nuts. Mix until evenly distributed. Cover and refrigerate until firm.
  • Roll the chilled chocolate mixture into bite-size balls. Roll balls in a mixture of ground nuts and confectioner's sugar, or just plain confectioner's sugar. Store in a covered container for a week before serving to blend the flavors.

These balls are so quick and easy to make. They make a nice addition to the baked goodies that you give as gifts. Make these about a week before you want to serve them as they mellow and the sharp strong alcohol taste blends in more with the other ingredients. Store in a tin with a tight lid. This year I couldn't find the Vanilla wafers so I used chocolate and I like them even more. To form the balls I use two teaspoons as the dough is quite moist. I store them in the freezer - they don't go hard and they are so good ice cold

Christmas Rum Balls(Or Bourbon Balls) image

Steps:

  • Sift the cocoa with 1 cup sugar.
  • Stir in the spiced rum mixed with the syrup.
  • Add crushed vanilla wafers and nuts.
  • Mix thoroughly.
  • Shape mixture into walnut sizes balls and dredge with remaining sugar or leave them plain.
  • Store in a tin.

2 1/2 cups vanilla wafers, crushed (a 250g box of Christies vanilla wafers equals 2 1/2 cups)
2 tablespoons cocoa
1 1/4 cups icing sugar
1/2 cup spiced rum (the rum is called Spiced Rum) or 1/2 cup Bourbon
2 tablespoons white corn syrup (one brand is Karo)
1 cup pecans or 1 cup walnuts, broken

GINGERBREAD RUM BALLS

This is the perfect recipe to make if you've got crumbs leftover after building a gingerbread house. Or you can use a package of gingersnaps ground up in the food processor or blender. The flavor of rum balls improves after they sit for a couple of days, so plan ahead if you're considering these for a holiday bash. They will last for two weeks or even longer if you store them airtight at room temperature. Rolling rum balls in confectioners' sugar gives you a soft, moist confection while using granulated sugar results in a crunchier texture. And if you'd rather skip the alcohol, you can substitute orange or apple juice for the rum. Just reduce the confectioners' sugar by a tablespoon or two, to taste.

Gingerbread Rum Balls image

Steps:

  • In the bowl of a food processor, pulse together cookie crumbs and pecans until nuts are coarsely ground. Do not overprocess - you want the nuts to have some texture. Alternatively, finely chop the pecans and toss them in a bowl with the crumbs.
  • In a separate large bowl, stir together confectioners' sugar, rum, maple syrup, cocoa powder, fresh ginger, cardamom, cinnamon, ground ginger and salt. Add to food processor and pulse until just combined, or stir into bowl with the crumb mixture, squeezing everything together into a mass. Taste and add more fresh ginger if you like.
  • Roll dough into 1-inch balls, then roll in confectioners' sugar or granulated sugar. If the dough starts to dry out as you roll the balls, drizzle in a little more rum. Store in an airtight container at room temperature (they will keep for at least 2 weeks); roll balls in additional sugar just before serving.

Steps:

  • Put the chocolate in a microwave-safe bowl and heat on medium for 1 minute. Stir and repeat until the chocolate melts, about 3 minutes in all, depending on the power of your microwave. Alternatively, put the chocolate in a heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl on the pan (without touching the water). Stir occasionally until melted and smooth.
  • Process the cookies in a food processor until finely ground. (You should have about 1 1/2 cups ground cookies.) Alternatively, put the cookies inside a heavy resealable plastic bag and crush by moving a rolling pin over the cookies.
  • Stir the cookie crumbs, dried plums, confectioners' sugar, bourbon and condensed milk into the chocolate until evenly combined. Cover and refrigerate the mixture until firm enough to roll into balls, about 45 minutes.
  • Scoop a tablespoon or so of the mixture at a time into a small ball with a cookie or small ice cream scoop and set onto a baking sheet or large plate. Roll each portion by hand into a smooth ball.
  • Store the booze balls in an airtight container at room temperature for a day to allow the flavors to come together. Store the balls in the refrigerator for a week or freeze for up to 1 month. Roll in decorating sugars or wafer crumbs and serve.

  • In food processor, process vanilla wafers into fine crumbs. Pour crumbs into large bowl. Add nuts, 3/4 cup powdered sugar and 2 tablespoons cocoa; stir to combine.
  • In small bowl, stir together brandy and corn syrup until well combined. Add to dry mixture; stir until dough-like mixture forms.

  • 1. Place Cocoa, powder sugar, pound cake crumbs, butter, cinnamon extract, and spices in processor. Give them a good spin a couple of times so they are evenly distributed. Add the alcohol of your choice. Process till it forms a ball. Wrap and place in the refrigerator for a few minutes. I let the dogs out at this time and made a cup of tea.
  • 2. Cover a cookie sheet with waxpaper or parchment paper. Form the balls, just about walnut size. I used a small cookie scoop. Roll balls between your hands. Place on cookie tin between layers of waxpaper When finished place in refrigerator.

  • Mix together the cookie crumbs, hazelnuts, icing sugar, cocoa, corn syrup and bourbon well and roll into 1 inch balls. Place the balls on a parchment lined cookie sheet as you form them and chill in the fridge for at least an hour.
  • Do not let the chocolate overheat. Melt it very gently over slowly simmering water. You want the chocolate just at its melting point before you dip the bourbon balls. Higher temperatures can cause the chocolate to develop white spots when it’s fully cooled.
  • Keep the chocolate over the hot water even when you remove it from the stove. I simply use two forks to roll the balls around in the chocolate one at a time; the fork also allows excess chocolate to drip easy away.
