BUDGET SEASONED STEAK

This is the easiest steak recipe in the world, courtesy of my friend Marcie, who also likes painless cooking. It is cheap (as steak goes), simple and surprisingly tasty. I'm not really sure what category it belongs in, because it's more of a tip than a recipe, but it is so good I just had to share!

Steps:

  • Mix ramen seasoning, water.
  • Place steaks in skillet or saucepan.
  • Baste steaks with ramen/water mixture, pouring excess into bottom of skillet.
  • Cover and refrigerate overnight.
  • Ideally, flip steaks halfway through marinating period so other side soaks up juice.
  • After steaks are marinated, cook at medium-high heat on stovetop to desired thoroughness.

  • Trim beef; cut into serving-size pieces. Place in a greased 13-in. x 9-in. baking dish. Sprinkle with pepper. Top with the onion, mushrooms and tomato sauce. Cover and bake at 325° for 1-3/4 to 2 hours or until meat is tender. Serve over noodles.

Steps:

  • Combine onion, egg, mustard and meat. Mix together, season with salt and pepper. If too liquid, add breadcrumbs until a ball will hold together.
  • Roll into 1 inch meatballs and roll in breadcrumbs. Let rest 5 minutes.
  • Melt butter in a skillet and fry meatballs at medium temperature until lightly brown. Remove meatballs and reserve.
  • Add cream to skillet. Add pepper to taste and enough chicken stock to make a a nice creamy gravy. Add meatballs and cook until heated through.
  • Serve meatballs and the cream sauce together with mashed or boiled potatoes.

  • Peel and remove as much of the pith that you are able from 3 of the oranges, then segment them. Mix the orange segments with the endive, watercress and red pepper in a large salad bowl.
  • Zest the remaining orange and add to a separate bowl. Juice the remaining orange and add to bowl. Whisk in the yogurt and season to taste.

  • Mix seasonings together in small dish.
  • Trim fat from steak and rub seasoning mixture on both sides.
  • Place the steak on rack of broiler pan.
  • Position pan so that steak is about 3 inches from heat.
  • Broil 10-12 minutes for a ¾ô steak, turning once during cooking OR grill as desired.

  • Rinse steaks and pat dry. Let steak sit at room temperature for 20 minutes. Sprinkle lightly all over olive oil.
  • Spread jerk seasoning over both sides of steak.
  • Lay steaks on grill 4 to 6 inches above heat; close lid on gas barbecue. Cook until done to your liking, 4-6 minutes for medium-rare, turning once with a wide spatula or tongs halfway through cooking.
  • Transfer to a board or platter and let rest about 5-10 minutes before serving. To allow the juices to redistribute.

Steps:

  • Heat the oil in a large saucepan over medium heat. Add the sliced meat and brown well. Remove meat. Add the gravy mix and water and bring to a boil, stirring constantly.
  • Stir in the onion powder, brown sugar, vinegar, Worcestershire sauce, ginger, bay leaf and salt, and ground black pepper to taste. Return the meat to the pan, reduce heat to low, cover and simmer for one hour, or until meat is tender. Remove bay leaf.
  • Note: You could also transfer to a casserole dish and bake covered at 350 degrees F (175 degrees C) for 1 1/2 hours.

  • For the Herb Butter: Add ingredients to a bowl then stir with a fork to combine. Scoop herb butter onto a sheet of plastic wrap then shape into a thick log and refrigerate until firm (if time is of the essence you can freeze for 20-30 minutes.) Can be done ahead of time.
  • For the steaks: Trim steaks of any big hunks of fat to avoid flare ups on the grill then pat dry with a paper towel. Rub each side with oil then season generously with the steak seasoning and press gently into steaks so it adheres - you should use most if not all of the seasoning.
  • Light 2/3 or 1/2 of your grill burners (2 of 3 burners, or 1 of 2 burners, depending on how many burners you have) then heat on high for 10-15 minutes, or until the grill reaches 500 degrees. Add steaks to the lit side then sear on each side for 1-1/2 minutes (adjust accordingly if your steaks are bigger or smaller than 1lb cut 1-1/2" thick,) keeping the lid closed between flipping. Transfer steaks to unlit portion of grill then continue cooking for 7-10 minutes with the lid closed for medium doneness, or until they've reached your preferred level of doneness. Remove steaks to a platter then let rest for at least 5 minutes. Top with sliced herb butter then serve.
