SCOTT URE'S CLAMS AND GARLIC

So simple, but so good - steamed clams served in their own liquor. Serve with a crusty Italian bread, or over pasta.

Steps:

  • Wash clams to remove any dirt or sand.
  • In a large pot, heat oil over medium heat. Add garlic; saute for 1 minute, or until tender. Pour in the white wine. Boil until wine has reduced to half its original volume.
  • Add clams, cover, and steam till clams start to open. Add butter, cover, and cook till most or all of the clams open. Discard any that do not open. Transfer clams and juice to 2 large bowls. Sprinkle with parsley. Serve.

Clams in Oyster Sauce image

Steps:

  • Heat the oil in a large pot with a lid over medium heat. Cook the onion and garlic in the hot oil until fragrant, 3 to 5 minutes. Add the ginger to the mixture and cook another 2 minutes. Stir the oyster sauce into the mixture; cover and cook another 2 minutes. Pour the water into the mixture, cover, and cook another 2 minutes. Add the clams; cover and cook until the majority of the clams have opened, about 5 minutes. Discard any clams which do not open. Serve immediately.

Steps:

  • Heat oil in a heavy saucepan. Add garlic and chile flakes and cook on low until they start to sizzle. Add remaining ingredients.
  • Cover pan and cook on low until clams open. Remove from heat and keep covered for use in fat rice. Or serve clams immediately along with the broth, if serving as an appetizer.

Steps:

  • 1. Soak clams in salty water for 5 hours before preparing dish, and rinse.
  • 2. In a large pan, saute garlic in oil.
  • 3. Add parsley and clams; cover 5 to 10 minutes to open the clams.
  • 4. Once clams are open, add bread crumbs, salt, white wine and chile.
  • 5. Move pan back and forth for about 5 minutes over medium heat until sauce thickens.

  • In a glass measuring cup, crumble the saffron threads into the fish stock and let stand for 10 minutes.
  • In a large pot, heat the olive oil. Add the minced garlic and diced onion and cook over moderately high heat, stirring, until the vegetables are softened, about 4 minutes. Stir in the flour until incorporated. Add the saffron-infused fish stock and Albariño and bring to a simmer, stirring, until thickened. Add the clams, cover and cook, shaking the pot, until the clams open, about 6 minutes. Discard any clams that do not open. Spoon the clams into bowls. Season the Albariño sauce with salt and pepper, pour it over the clams and serve them with crusty bread.
