This is great on a croissant, in a pita pocket, or on bread. It's a great use for leftover turkey.

Steps:

  • In a blender, combine the cranberries, orange, sugar, vinegar, salt, mustard and onion. While processing, gradually add oil in a steady stream. Refrigerate.

Salad With Turkey and Cranberry Dressing image

Steps:

  • Preheat oven to 425 degrees. Stir together the butter and Italian seasoning in a bowl. Add the bread cubes; toss to coat. Bake cubes in a single layer in a jelly-roll pan for 3 to 5 minutes or until golden, stirring once. Cool completely on a wire rack. (about 5 minutes).
  • Combine the spring greens, romaine, turkey or ham, and cucumber. Add the toasted bread cubes.
  • Process the vinegar and next 6 ingredients in a blender until smooth. Serve over the salad.

Steps:

  • In a large saucepan, combine the cranberries, apple, sugar and water. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until tender. Remove from the heat; set aside., In a large skillet, saute the celery, onion, garlic, sage and pepper in butter until tender. Remove from the heat; stir in cranberry mixture and croutons. , Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 25-30 minutes or until heated through.
