SALISBURY STEAK
Treat your family to Ree Drummond's Salisbury Steak recipe from The Pioneer Woman on Food Network; smother the beef patties in gravy for a rib-sticking meal.

- For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
- Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
- For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
- Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

- In a small bowl, combine the egg, bread and onion; crumble beef over mixture and mix well. Shape into two patties., In a large nonstick skillet over medium heat, brown patties on both sides in oil if desired; drain. Combine the soup, water, mushrooms and pepper; pour over patties. Bring to a boil. Reduce heat; cover and simmer until meat is no longer pink.

This recipe has been in my family for years. It's easy to cook, but tastes like it took hours to make! I usually make enough extra sauce to pour over mashed potatoes. YUM!

- In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
- In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
- In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.

A good recipe for Salisbury steak recipe is hard to find! I remember enjoying it often when I was growing up, but when I decided to add it to my recipe collection, I wasn't able to find it in my modern cookbooks. - In a medium bowl, combine egg, cracker crumbs, onion, salt, pepper and sage. Add beef and mix well. Shape into two patties. , In a medium skillet, cook patties for 4-5 minutes per side or until browned; drain. Remove to a platter and keep warm. , In the same skillet, saute mushrooms in butter for 2 minutes. Stir in flour; blend well. Add water and bouillon; cook and stir until smooth and thickened. Stir in browning sauce if desired. Return patties to gravy and cook, uncovered, over low heat for 10 minutes, stirring occasionally. Serve with mashed potatoes.

I found the basic recipe in the 2007 Taste of Home Annual Recipes. It was sent in to them by Toni Martin of Byron Center, Michigan.But I added alot of different things, also changed the way that it was prepared and cooked. Submitted to " ZAAR " on October 21, 2009.

- In a medium size bowl, add egg, milk,breadcrumbs, 1 Tablespoon gravy mix, onion, garlic powder, red pepper flakes, and ground beef.
- Mix all ingredients together, DO NOT over mix ( you do not want the meat to get dry ) divide meat mixture into two oblong patties, about 3/4 inch thick.
- Using a skillet large enough to hold both patties, fry over medium heat until desired doneness is reached ( I cooked mine for about 10 minutes total ).
- Remove patties from skillet, and keep warm.
- In the same pan that the patties were cooked in, ( if not using lean beef,drain "drippings " ) add rest of ingredients and stir until thickened and no lumps remain.
- Pour gravy over patties, eat and ENJOY !

- My Note: Here are the changes I made to what is now my favorite dish. In the gravy, I used a can of French Onion soup as well as a can of Cream of Mushroom and a packet of Dry Onion Soup or sauteed onions. I omitted the salt due to the high sodium content in the soups. I'm glad I did. I doubled the gravy except for the ketchup -- kept it at 1/4 cup while doubling the rest. I also added a jar of mushrooms to the gravy. After browning each side of the patties (and yes, having them fall apart slightly), I transferred the patties to a foil-lined casserole dish, put the gravy on top, covered the dish, and cooked it at 375*F. for 45 minutes. I was worried the patties wouldn't get all the way done because they were pretty thick, but they turned out perfect! so simple to make. So, if you're craving an old cafeteria food favorite - don't waste your time with the recipe for the sauce - buy a box of Lipton Mushroom Onion soup mix and make the gravy with it - you won't regret it! We had it with brown rice (and had just enough wonderful gravy to go along with it!) and steamed broccoli. This is a new favorite recipe for my wife and me. For those who had trouble keeping the patties together, try this it was suggested to me. Instead of cooking in a skillet, place browned patties in a foil-lined casserole dish, pour gravy over top, and bake at 400 for 30 minutes Your patties will stay together nicely! I do like to play with my food. I would love to hear any improvements and/or variations you make to this simple recipe. Enjoy!

- In a large bowl, add everything in for the patties, mix together well to combine, form into 6 or 8 patties (depending on how big you want them) make sure to flatten them a bit because they will puff up as they cook. Sear them on both sides in a non-stick skillet and set aside.
- In the same skillet with any leftover drippings, add the butter, along with the mushrooms and onions, add a pinch of salt, saute for about 8 minutes or so, or until they soften and develop some color around the edges, add the garlic and cook for 30 more seconds.
- Sprinkle the flour over the mushrooms, stir them in until the flour is incorporated, then add the beef stock along with more Worcestershire sauce, nestled the seared patties in the broth, bring to a boil, partially cover, lower the temperature to medium low and simmer for about 45 minutes, adjust the seasoning to taste, sprinkle with some parsley and serve over mashed potatoes.
