  • In a medium saucepan of simmering water, poach the salmon filets 10 minutes, or until flaky and tender.
  • In a medium bowl, mix together cream cheese, sour cream, green onions, salt, hot pepper sauce, lemon juice and Worcestershire sauce.
  • Flake salmon into the mixture. Cover and refrigerate 8 hours, or overnight, before serving.

One day we were shopping at Costco in Albuquerque, New Mexico, and a sample lady gave us a sample of salmon spread on a cracker. It was absolutely DELICIOUS! The next day we returned and purchased the Bear & Wolf brand of Wild Alaskan Pink Salmon, which is the brand you should use if you can get it. You can even get it through their website.   • Line 2-cup bowl or mold with plastic wrap. Beat cream cheese in medium bowl with electric mixer on medium speed until smooth. Stir in salmon, 2 tablespoons of the red onion, 1 tablespoon of the dill weed and the mustard.
  • Spoon into bowl lined with plastic wrap, pressing firmly. Cover and refrigerate at least 2 hours but no longer than 24 hours.
