SOUTHWEST SALSA RICE BITES APPETIZER
Although this recipe sounds like another one named similarly, it has different proportions so be aware they are different.This recipe is for a unique appetizer with a southwest kick. Fun to make and fun to eat. Very simple ingredients but delicious. These were eaten so fast and everyone wanted the recipe guest and family alike. The rice gives it unique texture. I use cheddar pepper jack so you can too if you have trouble finding just pepper jack. Further, I used Japanese sticky rice (not Uncle Bens or the the like) and Tostitos salsa but you can sub in your favorites. The sticky rice really binds it. Picture coming. Enjoy! ChefDLH

Steps:
- Preheat oven to 350 Degrees.
- Stir together 1½ cups cooked white or brown rice, 1 cup shredded pepper Jack cheese, 1 beaten egg, 1/3 cup salsa, 1/4 cup sour cream and salt and pepper to taste.
- Spray 24 mini muffin pan or mini bar pan with nonstick cooking spray and press equal amounts of rice mixture into each cup.
- Top with 1/3 cup crumbled tortilla chips and bake for 15 to 20 minutes or until tops are lightly browned.
- Top with salsa, sour cream and cilantro leaves.

Salsa's great served alone with chips, but mixing and heating it with cream cheese makes a wonderfully warm dip!

- In 1-quart saucepan, heat cream cheese and salsa over low heat about 5 minutes, stirring occasionally, until cream cheese is melted.
- Keep warm in heatproof dish. Serve with chips.

- Soften the cream cheese by leaving it out on your counter for 30 minutes. You need to do this so that it blends well with the sour cream. To a medium bowl add the softened cream cheese and the 8oz of sour cream. Using a handheld mixer, blend until smooth. It’s OK if there are a few lumps, but you do want it to be mostly smooth. You can also use a stand mixer to do this if you have one.
- To assemble, spoon the cream cheese sour cream blend into your serving dish and spread to cover the entire bottom. Whatever dish you use, you want it to have an edge higher than the dip, like the pie plate in the photo. This will make sure as the liquid from the salsa separates it doesn’t run right off of a platter onto your table. Next, pour the entire jar of salsa over top and smooth to cover the cream cheese sour cream blend. Next, cover the salsa with all of the shredded Cheddar cheese. Lastly, sprinkle with the diced onions. Serve with your favorite chips and enjoy!
