CANDY CANE SNOWBALLS

I bake dozens of kinds of Christmas cookies to give to family and friends. I came up with this recipe when I had leftover candy canes. We dip the snowballs into a white candy coating, then into crushed peppermint candy. -Debby Anderson, Stockbridge, Georgia

Steps:

  • Cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in vanilla. Gradually beat in flour. Stir in pecans. Refrigerate, covered, until firm enough to shape, 3-4 hours., Preheat oven to 350°. Shape dough into 1-in. balls. Place 2 in. apart on ungreased baking sheets., Bake until lightly browned, about 15 minutes. Remove from pans to wire racks; cool completely. , Dip tops of cookies into candy coating, allowing excess to drip off; dip into crushed candies. Let stand until set.

Steps:

  • 1. Cream together butter, sugar, and vanilla.
  • 2. Add flour and salt; mix well. The mixture will be dry and crumbly.
  • 3. Fold in nut of choice.
  • 4. Scoop out about a tablespoon at a time.
  • 5. Squeeze the mixture together and roll into a ball.
  • 6. Place balls on a parchment paper-lined cookie sheet.
  • 7. Bake at 375 degrees for 10-15 minutes.
  • 8. When done, cool and roll each ball in confectioners' sugar. Some recipes say to roll in sugar while warm but I find the sugar can get wet and soggy. You be the judge!

1/2 c sugar
1 c butter, softened (2 sticks)
2 1/4 c all-purpose flour
1 tsp vanilla
1 pinch salt
1/2 - 3/4 c chopped walnuts or pecans

  • Preheat oven to 300°. In a large bowl, cream butter and sugar. Add water and vanilla; mix well. Gradually add flour; fold in pecans. , Roll dough into 1-in. balls. Place on ungreased baking sheets and flatten with fingers. , Bake 20-25 minutes or until bottom edges are golden brown. Cool on a wire rack. When cool, dust with confectioners' sugar.

SANDY'S SNOWBALLS

When we lived in Kentucky, one of our neighbors brought these tasty, light cookies to a cookie exchange. These are different from the usual snowballs in that there is no sugar in the cookie dough (although the cookies do get coated in powdered sugar after baking). These cookies were one of the big hits of the exchange. Prep time includes 15 minues for mixing up the dough and forming into balls, then another 15 minutes for rolling in the powdered sugar. However, there is also cooling time between the first and second rolling, so allow some extra time for that.

Steps:

  • Preheat oven to 350 F.
  • Cream butter until smooth and creamy, using an electric mixer.
  • Using a wooden spoon, stir in cake flour,vanilla, egg,& salt until mixed well (using an electric at this point could make the dough too tough).
  • Stir in the ground nuts.
  • Shape into 30 small balls and bake on parchment lined baking sheets at 350 F for 10 minutes (they will appear to be sitting in puddles of melted butter as they bake - this is normal), then rotate your trays in the oven and continue baking another 5-10 minutes, or until they just start to turn golden.
  • Roll in powdered sugar while hot.
  • Let cool.
  • When cool, roll again in more powdered sugar to coat.
  • Store in wax paper lined cookie tins.
