FRESH GREEN BEAN CASSEROLE WITH RICOTTA
Steps:
- 1. Preheat one Frigidaire Gallery® Double Wall Oven to 425°F. 2. On a large rimmed baking sheet, toss the green beans with 2 tablespoons oil. Sprinkle with salt and pepper. Spread in an even layer and roast until crisp-tender, about 20 minutes. 3. Meanwhile, in a medium bowl, stir the ricotta, parsley, lemon zest and juice, and a pinch each of salt and pepper. Add more lemon zest and juice, salt, and pepper to taste if desired. 4. Heat the remaining 2 tablespoons oil in a large skillet over medium heat on the Frigidaire Gallery® Induction Cooktop. Add the shallots and a pinch of salt. Cook, stirring frequently, until golden brown and crisp, about 4 minutes. Add the walnuts and cook, stirring frequently, until the nuts are toasted and fragrant, about 1 minute more. 5. Spread the ricotta mixture evenly in a serving dish and top with the green beans. Sprinkle the shallot-walnut mixture on top. Garnish with parsley.

- Preheat the oven to 475 degrees F.
- Combine the onions, flour, panko and salt in a large mixing bowl and toss to combine. Coat a sheet pan with nonstick cooking spray and evenly spread the onions on the pan. Place the pan on the middle rack of the oven and bake until golden brown, approximately 30 minutes. Toss the onions 2 to 3 times during cooking. Once done, remove from the oven and set aside until ready to use. Turn the oven down to 400 degrees F.
- While the onions are cooking, prepare the beans. Bring a gallon of water and 2 tablespoons of salt to a boil in an 8-quart saucepan. Add the beans and blanch for 5 minutes. Drain in a colander and immediately plunge the beans into a large bowl of ice water to stop the cooking. Drain and set aside.
- Melt the butter in a 12-inch cast iron skillet set over medium-high heat. Add the mushrooms, 1 teaspoon salt and pepper and cook, stirring occasionally, until the mushrooms begin to give up some of their liquid, approximately 4 to 5 minutes. Add the garlic and nutmeg and continue to cook for another 1 to 2 minutes. Sprinkle the flour over the mixture and stir to combine. Cook for 1 minute. Add the broth and simmer for 1 minute. Decrease the heat to medium-low and add the half-and-half. Cook until the mixture thickens, stirring occasionally, approximately 6 to 8 minutes.
- Remove from the heat and stir in 1/4 of the onions and all of the green beans. Top with the remaining onions. Place into the oven and bake until bubbly, approximately 15 minutes. Remove and serve immediately.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat.
- Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese.

- Preheat the oven to 400˚F (200˚C).
- In a large pot of salted boiling water, blanch the green beans for 3 minutes, until tender and bright green. Drain and transfer to a 9x13-inch (23x33 cm) baking dish.
- Melt 4 tablespoons of butter in a large pan over high heat. Add the onions and cook for 8 minutes, until softened and translucent.
- Add the mushrooms and cook for 5 minutes, until browned. Add the garlic and cook just until fragrant, about 1 minute.
- Transfer the vegetable mixture to the casserole dish with the green beans. Wipe out the pan.
- Melt the remaining 4 tablespoons of butter in the same pan. Add the flour and stir to combine. Cook until a golden brown roux forms, for 5 minutes.
- Add the milk, heavy cream, salt, pepper, chicken broth, and Parmesan cheese, and stir to combine. Reduce the heat to medium-low and cook until the sauce is thickened, about 10 minutes.
- Pour the sauce evenly over the vegetables in the casserole dish and toss until everything is well coated. Cover with foil.

SARASOTA'S RE-MAKE OF THE GREEN BEAN CASSEROLE
This is my take on the famous "Green Bean Casserole." It uses fresh green beans which I love, but I still uses French Fried Onions (the famous canned ones). However I make my own sauce, vs soup and add fresh mushrooms, pancetta and a little white cheddar for a little twist. So, it is "classic updated." It was a combination of 2 or 3 recipes, and decided this is what I like best.

- Beans -- Add the beans to a medium size saute pan, try to get them mostly in a single layer if possible and cover with water. Just enough to cover. Bring to medium heat and cook 4-5 minutes until crisp, but slightly tender - no need to cover. You don't want them all the way cooked, but tender. Once they are done. Drain and remove to a casserole dish sprayed with a non stick spray.
- Bacon (or pancetta) -- In that same pan, pour out any water and add the oil to the pan and bring to medium heat. Add the diced bacon or pancetta and 30saute until golden brown. About 5 minutes stirring often, you want it crisp. Remove to a plate lined with a paper towel to drain and then transfer to the casserole dish with the beans.
- Onions/Mushrooms -- Using some of the drippings from the bacon (about 1 teaspoon) add the onions and mushrooms and saute until, once again, slightly tender, but not over done. Medium heat. Season with salt and pepper. Remove and add to the casserole dish with the beans and bacon.
- Mushroom Broth -- Again, t that same pan, add the butter and bring to medium heat until melted. Then stir in the flour and whisk well until combined, cook just a minute until the flour taste is gone. Add in the broth and bring to a medium boil. The sauce will naturally thicken. Add in the soy sauce, cream, salt and pepper to taste, cook just another minute and it is done. Pour the sauce over the vegetables and mix well to combine.
- Bake Casserole -- To the green bean casserole, stir in 2/3 cup of the french fried onions and bake at 350 for 20-25 minutes until bubbly, uncovered. After 20-25 minutes, remove and gently stir, then top with the remaining french fried onions around the edge of the casserole and sprinkle the cheese in the center. Bake another 5 minutes until the onions are golden brown and the cheese is melted.
- Serve -- Just ENJOY this classic remake!

- Heat 1 tbsp of the butter and the oil in a large pan and fry the mushrooms for 10-15 mins until golden. Stir in the green beans and cook for another 3-4 mins until the beans turn bright green. Scoop out the veg onto a plate.
- Heat the oven to 200C/180C fan/gas 6. Melt the remaining butter in the pan until foaming. Remove from the heat briefly and sprinkle over the flour, stirring into the butter to make a golden brown paste. Return to the heat and add the milk, a splash at a time, continually stirring until all the milk has been added and you get a smooth, thick white sauce. Season well. Stir the beans and mushrooms into the white sauce, and spoon into a medium ovenproof dish.
- Scatter over the crispy onions, then bake for 20-30 mins until bubbling and golden, covering if the onions brown too quickly.
