LITTLE MEAT LOAVES
"I've wanted to reduce the fat in my meat loaf for many years, so I finally came up with this recipe," explains Paul Soper of Sierra Vista, Arizona. "By starting with lean ground beef and not adding any milk or egg yolks, I reduced the total fat considerably. Making individual loaves cuts the cooking time by almost half," he adds.

- In a large bowl, combine the first 11 ingredients. Crumble beef over mixture and mix well. Shape into eight loaves. , Place on a rack coated with cooking spray in a shallow baking pan. Bake, uncovered, at 350° for 30 minutes. Spoon ketchup over the loaves. Bake 15 minutes longer or until a thermometer reads 160° and meat is no longer pink.

INDIVIDUAL MEAT LOAVES
Steps:
- Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
- Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

- Preheat oven to 350.
- Mix together the ground beef, oatmeal, salt, egg, milk, and onion powder.
- Form into 4 small loaves.
- Place in shallow baking pan.
- Mix the catsup, mustard, and brown sugar together.
- Spread topping evenly on top of the loaves.
- Put a little water in the bottom of the baking pan.
- Bake at 350 for 35-40 minutes.

MY SAUCY LITTLE MEAT LOAVES
These are really tasty with the addition of orange marmalade. I use to make one large loaf but this is great as smaller personal loaves. They can be frozen after cooking if you don't need them all. We all love them.

- In large bowl combine beef,egg,oatmeal,onion,salt and pepper. Add 1/2 cup tomato sauce and stir well.
- Shape into 6 oval loaves in shallow pan. Bake in preheated 450F oven for 30 minutes.
- In the meantime combine remaining sauce, marmalade and Worcester sauce and stir to mix. At end of baking time remove excess fat from pan of loaves and pour sauce mixture over loaves. Bake an additional 10 minutes longer.

My family and I can't get enough of these little meat loaf muffins topped with a sweet ketchup sauce. They are the perfect portion size. - In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, Worcestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for 5 minutes. Crumble beef over cereal mixture and mix well. , Press meat mixture into 18 muffin cups (about 1/3 cup each). Bake at 375° for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink and a thermometer reads 160°. , Serve desired number of meat loaves. Cool remaining loaves. My precious little Mother made this when we were growing up in Fair Oaks California. We loved it, the only problem she usually served it with canned peas which we hated and tried to sneak to the dog when no one was looking....LOL Sorry Daddy!! NOT! She was and still is to this day a wonderful cook at the age of 82. God bless...

- 3. TOPPING 1/3 C Catsup 1 T Brown sugar 1 T prepared mustard
- 4. Combine topping ingredients and spread over the top of each meat loaf
- 5. Bake at 350 degrees for 30 minutes
- 6. Serve with mashed potatoes and My Granny Helens 9 day slaw. Enjoy
