CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

PERFECT SMASHED POTATOES
We've seen plenty of potato trends over the past few years: Retro hasselback potatoes made a comeback, buttery "melting" potatoes took over Pinterest soon after, and now smashed potatoes are the spuds of the moment. The idea is to simmer small potatoes until tender, then toss them with olive oil, flatten them and crisp them in the oven. It's simple - and insanely delicious. There are more than 35,000 #smashedpotatoes photos on Instagram, and many Food Network stars are obsessed, too. Here's how to make them like a pro.

Reduce to a simmer and cook until the potatoes are tender, 20 to 25 minutes. Drain, discarding the bay leaves and garlic. Toss the potatoes with 2 tablespoons olive oil, transfer to a baking sheet and smash with a spatula or measuring cup. Drizzle with more olive oil and season with salt and pepper. Broil, turning, until crisp and golden, 15 to 20 minutes.
SPICY SWEET POTATOES
My family fell in love with the combination of sweet and spicy in this potato side dish the very first time they tried it. It goes great with poultry...and looks so pretty on the dinner table. I try to serve it often. -Lynn Thomas London, Ontario

SAUCY POTATOES
Potatoes with a rich, flavoursome tomato-based sauce. Lots of nutrients and very tasty. This is my own recipe. The quantity below is enough to serve 2 as a main meal, or 4 as an accompaniment to steak, fish, a flat mushroom topped with cheese, or whatever you like.

Steps:
- Wash the potatoes and put them into a saucepan with boiling water. Boil them until tender, about 20 minutes.
- Meanwhile peel and finely chop the onions, and sautée them in a little oil on a medium heat until soft. This should take about 10 minutes.
- Once the onions are soft add the chopped tomatoes and garlic to the pan, and the frozen spinach if using. Simmer these together, stirring frequently, until the spinach is thawed and heated through, and the sauce has thickened.
- Once the potatoes are tender and the sauce has thickened, if you are using fresh spinach you should add it to the sauce now and quickly stir it in to wilt it.
- Drain the potatoes and add them to the sauce, stirring to coat them evenly. Now serve.
