Steps:
- Trim the beef of excess fat, salt it and set aside. Make a marinade by combining red wine, vinegar, water, onions, peppercorns, juniper berries, bay leaves and cloves in a large pot and bring to a boil over high heat. Let this marinade cool to room temperature. Place the beef in the now cooled marinade, cover, and refrigerate, overnight if possible, but for at least 2 hours.
- Remove the meat from the marinade and set aside on a utility platter. Strain the marinade into a pot, bring to a boil, and skim, then reduce to a simmer.
- Heat the oil in a large saute pan. Add the beef and sear it on all sides, then remove to a utility platter. Combine the carrots, onion, and celery in the same pan to make a mirepoix. Saute for 2 to 3 minutes, deglaze pan with a small amount of the warmed marinade, then add the tomato paste and continue cooking for another 2 to 3 minutes. Add a bit more of the warmed marinade to the saute pan to de-glaze, and reduce heat to medium. Add the flour gradually until a paste is formed. Then, slowly add all of the warmed marinade to the mixture, similar to making a roux. If the sauce is too thick, which can sometimes happen due to density of flour, gradually add chicken or vegetable stock until you reach the consistency where it coats the back of a spoon. Return the meat to the pan, cover and simmer until fork-tender, about 1 1/2 to 2 hours.
- Remove meat and let rest 5 to 10 minutes before slicing. Strain the sauce, place slices of meat on serving plate, spoon sauce around and garnish with steamed vegetables and dollops of sour cream. Serve with cooked egg noodles as an accompaniment.
SAUERBRATEN WITH SWEET AND SOUR RED CABBAGE WITH APPLE
This is a DELICIOUS way of making a roast. It takes time in the refrigerator, but it is worth it. The preparation time does not include the marinating time in the refrigerator. If you have any questions, you can e-mail me: [email protected]

Steps:
- FOR THE MEAT:.
- 3 to 4 days before serving, wipe the meat with a damp cloth, and then place in a large plastic bag.
- In a large bowl, thoroughly combine the vinegar, Coca-Cola, water, onions, celery, carrots, pepper, cloves, bay leaves, sugar and salt, and pour over the meat.
- Fasten bag tightly and lay flat in a 13 inch x 9 inch pan. Refrigerate, turning bag 2 or 3 times a day.
- When ready to cook, remove meat (saving the marinade), and dry well. Rub the surface lightly with flour.
- In a Dutch oven, heat the cooking oil and slowly brown the meat well on all sides.
- Add 1 cup of the marinade liquid, plus some of the vegetables and all 3 of the bay leaves.
- Cover tightly and simmer on surface heat or in a preheated 350 degree oven for 3 to 4 hours until the meat is fork-tender.
- If needed, add more of the marinade during cooking to keep at least 1/2 inch of liquid in the Dutch oven.
- Remove the meat and keep warm until ready to slice.
- Into a bowl, place the drippings and junk. Add a few ice cubes and allow to stand a few minutes until the fat floats to the top.
- Remove the fat carefully with a large spoon, and then make the gravy.
- FOR THE GRAVY:.
- In the Dutch oven, combine the gravy ingredients, stir and cook about 5 or 10 minutes over medium heat until gravy is thickened. Taste for seasonings.
- FOR THE CABBAGE WITH APPLE:.
- In a medium saucepan combine all ingredients.
- Simmer covered, for about 1 hour, stirring occasionally.
- Also place the marinade vegetables in a covered saucepan with 1 cup of water and simmer about 1/2 hour as side dish.
- NOTE: Also serve with either boiled or parsley potatoes, or you could serve with dumplings.

SAUERBRATEN I
Here is a recipe for Sauerbraten that is pretty decent. However, this is more like a project. I know real Germans who approve of this recipe.

SWEET-AND-SOUR CABBAGE
"I HELPED MOTHER shred the cabbage and cut up the apples for this recipe. The touch of tartness is wonderful with the sauerbraten. This is one part of the meal that is even tastier if it can be made ahead."

TRADITIONAL SAUERBRATEN
I found two slightly different hand written versions of this, my Grandmother's recipe. Born in Nekkar am Rhein in the 1904, she naturally learned to cook traditional German meals as a young woman and didn't rely on a cookbook. I try to capture the nuance in this. Serve with potato dumplings.

- Dice the onion in a small dice (or you can slice, if you prefer), shred the cabbage relatively finely and peel and grate the apple.
- Warm the oil or butter in a pan and add the onion. Cook for a couple minutes until it softens. Add the cabbage, part at a time as needed to help it wilt down a little to create more space, and cook for a couple minutes so it starts to soften, stirring now and then to coat with the butter/oil.
- Add the vinegar, cloves and orange juice and mix. Add the apple and mix in well then cover. Reduce the heat and allow it to steam/sweat for around 30 minutes until tender, stirring now and then to make sure it doesn't burn on the bottom. If it gets too dry, add a little water or extra juice.
