SAUSAGE AND PEPPER FRITTATA
Steps:
- Preheat the oven to 350 degrees F.
- Coat a nonstick 10-inch saute pan with olive oil. Add the sausage and brown. Add the peppers and saute until they are soft.
- In a bowl, add the Parmigiano to the beaten eggs and season lightly with salt. Using a heat-proof rubber spatula, stir the eggs into the pan with the sausage and peppers. Stir the eggs to evenly distribute the sausage and peppers throughout the eggs. Once the eggs set on the bottom and around the sides of the pan, place the pan in the preheated oven for 7 to 8 minutes or until the eggs are cooked through. Remove from the pan. Cut into wedges and serve hot or a room temperature.

- In a Dutch oven, cook sausage, onion, yellow pepper and red pepper over medium heat until sausage is no longer pink and vegetables are tender, 6-8 minutes, breaking up sausage into crumbles; drain., Meanwhile, in a large saucepan, bring water to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, until thickened, about 5 minutes, stirring occasionally. Remove from heat. Stir in cheeses, cream, salt and pepper; keep warm., In a large skillet, heat oil over medium-high heat. Break eggs, 1 at a time, into pan; reduce heat to low. Cook until whites are set and yolks begin to thicken, turning once if desired. Divide grits among 6 serving bowls; top with sausage mixture and eggs. If desired, serve with pepper sauce.

- Cook sausage in large nonstick skillet over medium heat 4-5 minutes or until hot. Stir in potatoes.
- Beat eggs, cheese, salt and pepper in large bowl with wire whisk. Pour over sausage mixture.
- Cook over medium-high heat 2 minutes, occasionally lifting edge with spatula and tilting skillet to allow uncooked egg to flow underneath. (Do not stir.)

- In a small heavy saucepan bring the water to a boil, add the grits and salt to taste, and cook the grits, covered, over low heat, stirring occasionally, for 5 minutes, or until they are very thick. Spoon the grits onto a sheet of plastic wrap, using the plastic wrap form them into a 1/2-inch-thick rectangle, and chill them, wrapped in the plastic wrap, for 15 minutes. Cut the grits into 1/2-inch dice.
- In a 9-inch non-stick skillet cook the kielbasa and the bell pepper in 1 tablespoon of the oil over moderate heat, stirring, for 5 minutes. In a bowl whisk together the eggs, the scallions, the Cheddar, the cayenne, and salt to taste and stir in the kielbasa mixture and the diced grits, gently. In the skillet heat the remaining 1/2 tablespoon oil over moderate heat until it is hot but not smoking, pour in the egg mixture, and cook the frittata, without stirring, for 8 minutes, or until the edge is set but the center is still soft. If the skillet handle is plastic, wrap it in a double thickness of foil. Broil the frittata under a preheated broiler about 4 inches from the heat for 2 to 3 minutes, or until it is golden, and let it cool in the skillet for 5 minutes. Run a knife around the edge, slide the frittata onto a serving plate, and cut it into wedges. Serve the frittata warm or at room temperature.

This is a great, flavorful way to prepare grits. You can also use mild sausage and less or no hot sauce if you prefer not to have the extra spice. This can also be prepared up to the baking stage, and refrigerated or frozen until ready to finish.

- Preheat oven to 350 degrees F.
- Cook and stir sausage and onions in oil in heavy oven-proof 10-inch skillet on medium heat 5 minutes or until light golden brown.
- Combine remaining ingredients in medium bowl. Stir egg mixture into skillet mixture. Cook on medium heat, lifting with a rubber spatula once or twice, to allow uncooked portion to flow underneath. Cook just until egg mixture begins to set, about 6 minutes.

- Preheat oven to 425°F with oven rack in middle of oven. Bring stock to a boil in a medium saucepan over medium-high. Whisk in grits, and reduce heat to medium-low. Cook, covered, until grits are thickened and tender, 8 to 10 minutes. Uncover and stir in butter, cream cheese, 1 1⁄2 ounces of the Parmesan, and 1⁄4 teaspoon of the salt until butter and cheese are melted (mixture will be thick). Remove from heat; let stand at room temperature until ready to use.
- Cook sausage in a 10-inch nonstick skillet over medium-high until browned and crisp on all sides, 5 to 6 minutes. Transfer to a plate lined with paper towels, reserving 1 tablespoon drippings in skillet. Add mushrooms to skillet, and cook, stirring occasionally, until mushrooms begin releasing liquid, 5 to 6 minutes. Add leek, and cook, stirring often, until tender and liquid has been absorbed, about 6 minutes. Sprinkle vegetables with 1⁄4 teaspoon of the salt, and transfer to a medium bowl. Wipe skillet clean.
- Whisk together eggs, milk, and remaining 1⁄4 teaspoon salt in a large bowl. Stir in grits mixture, vegetables, and sausage. Pour grits-vegetable-sausage mixture into skillet.
- Bake in preheated oven until almost set, 15 to 20 minutes. Increase oven temperature to broil. Sprinkle evenly with remaining 1⁄2 ounce Parmesan, and broil until top of frittata is slightly golden, 3 to 4 minutes. Remove from oven, and garnish frittata with thyme before serving.
