SAUSAGE CHEESE PUFFS
People are always surprised when I tell them there are only four ingredients in this easy sausage balls recipe. Cheesy and spicy, these golden morsels are a fun novelty at a breakfast or brunch. They also make yummy appetizers. -Della Moore, Troy, New York

- Preheat oven to 400°. In a large skillet, cook sausage over medium heat until no longer pink, 5-7 minutes, breaking into crumbles; drain. , In a large bowl, combine biscuit mix and cheese; stir in sausage. Add water and toss with a fork until moistened. Shape into 1-1/2-in. balls. Place 2 in. apart on ungreased baking sheets. , Bake until puffed and golden brown, 12-15 minutes. Cool on wire racks.

CHEESY SAUSAGE SNACKS
Steps:
- Preheat the oven to 400 degrees F. Grease 2 baking or cookie sheets and set aside.
- Combine the biscuit mix, sausage and rosemary in a large bowl. Mix with your hands, then work in the white and yellow Cheddars and hot sauce. Form into balls the size of walnuts and place on the prepared baking sheets. Bake until cooked through, about 20 minutes. Serve warm.

- Preheat oven to 375ºF. Lightly spray mini muffin pans with cooking spray, set aside.
- Cook sausage in a large skillet over medium-high heat until no longer pink. Drain fat.
- Stir together cooked sausage, cream cheese, Worcestershire sauce and shredded cheddar cheese.
- Remove biscuits from cans and split each biscuit into two. Place each biscuit round into muffin tin. Scoop sausage mixture into biscuit cups.
- Bake for 12 to 15 minutes, until biscuits are golden brown.
SAUSAGE AND CHEESE BREAKFAST BITES
I had a box of buttermilk biscuit mix and didn't want just plain biscuits. So after looking through the odds and ends in my "fridge",I came up with this recipe.If desired brush tops of "bites" with melted margarine or butter. My son who is known on here by "Cylopsmaster" came up with the name for this recipe.Submitted to "ZAAR" on June 26th,2008.

Steps:
- Preheat oven to 450 degrees.
- While oven is heating, cook sausage over medium high heat, until lightly browned.
- Drain and set aside.
- In a medium sized bowl, mix together biscuit mix and water, until well combined.
- Then add rest of ingredients, including drained sausage.
- At this point the mixture will be thick and sticky.
- Drop by heaping tablespoonfuls on ungreased baking sheet.
- Bake for 10 minutes or until tops are golden brown, if desired brush with melted butter.

SAUSAGE STUFFING CREAM CHEESE BITES
Steps:
- Heat oven to 400°F.
- Remove puff pastry from the freezer and allow it to thaw for about 15 min. until you can unfold it without breaking. (Make sure you don't let it get too warm.)
- Prepare the STOVE TOP Stuffing according to instructions on box and set aside. In a skillet on stove top, cook sausage until browned and crumbled, set aside.
- In a large bowl with a hand mixer or stand mixer fitted with paddle attachment, mix together cream cheese and 1 egg until creamed together and smooth. Stir in cooked sausage until fully incorporated. Gently fold in stuffing with a spatula.
- Unfold the puff pastry sheets, roll out each sheet and cut into 12 squares. (The squares don't have to be perfect but each should be about 3-1/2-inch square.) Press 1 square on bottom and up side of each of 24 nonstick muffin pan cups. In a small bowl, whisk the remaining egg with a fork to create an egg wash. Brush the egg wash over the puff pastry, especially the edges. (This will give the pastry a darker golden finish. If you don't use an egg wash that is fine, you'll just get a paler finish.)
- Using a cookie scoop, divide the sausage-cream cheese mixture among the puff pastry cups, using 2 heaping teaspoons of filling per cup. Bake for 12 to 15 min. or until the puff pastry is golden brown. Top with a dollop of cranberry sauce, or serve it on the side. Serve immediately.

- In a large bowl, whisk together the flour, baking powder, salt, cayenne and black pepper. Add the shredded cheese and toss to evenly coat with the flour mixture. Add the sausage, onion and melted butter, and mix until a cohesive mass forms. Using your hands, break off pieces of the mixture and roll into 1-inch balls (I used a small cookie scoop). Place on the prepared baking sheet about ½-inch apart.
- Bake until the sausage is cooked through, about 25 to 30 minutes. Using tongs, transfer the warm sausage bites to a serving platter, insert toothpicks, and serve warm. These are best served as soon as they are baked, but leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat before serving.

- Place sausage, bread crumbs, onion, 1/4 cup marinara sauce, minced garlic, black pepper, and cheese into a mixing bowl and mix well. I find it's easiest to mix with my hands. Take your time on this to get things evenly mixed up. Your balls will stay together better if you take the time to mix.
- Using a 1 tablespoon size portion scoop, scoop meat into balls. Shape them in your hands and place onto prepared baking sheet.
