ITALIAN SAUSAGE SANDWICHES
I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

Steps:
- Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
- When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
- When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
- Remove sausages from pan, and set on paper towels to drain.
- Drain all grease from skillet, but do not wash or rinse it.
- Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
- Add onions, and garlic, and season to taste with salt and pepper.
- Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
- Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
- Continue cooking and tossing until onions are almost translucent.
- Add peppers, and toss to combine with onions.
- Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
- Bury the sausage in the vegetables to reheat if necessary.
- I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
- Either one is better than your typical hoagie roll.
- I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
- If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.

FESTIVAL-STYLE GRILLED ITALIAN SAUSAGE SANDWICHES
These delicious grilled sausage sandwiches are my attempt to duplicate the ones I ate when I was growing up and attended Italian street festivals in the North End of Boston. They come together really quickly, and make a great summer lunch. Choose hot or mild sausages as you prefer.

- Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
- Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.
- Place the sausages, onions, and peppers on the preheated grill. Cook and turn the sausages until well browned and juices run clear. Cook vegetables until tender and peppers are slightly charred. Remove vegetables and sausages from the grill.
- Place the peppers in a paper bag, close, and cool slightly. Remove and discard the charred skin from the peppers; slice peppers into strips. Slice the onion halves. Place salt and pepper to taste, and 1 tablespoon olive oil in a bowl. Add the peppers and onions, and toss until evenly coated. To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

- Preheat the oven to 375°F.
- In a skillet brown sausage.
- Drain off the fat, stir in the sauce and olives, heat through.
- Split rolls lengthwise without cutting through opposite side.
- Hollow out buns slightly, halve cheese slices lengthwise.
- Place a piece of cheese on bottom half of each roll.
- Divide meat mixture evenly among the 4 rolls, top with onion and sweet peppers.
- Place another cheese slice on top and close the rolls.

- In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and peppers; cook, stirring occasionally, until beginning to brown, about 7 minutes. CHARRED PEPPER AND SAUSAGE HERO SANDWICHES
This is street food, but slightly elevated. The peppers and onions are a little less cooked here, and the sausages are hard-seared. Use some good crusty rolls and enjoy the juiciness of this sandwich. The granulated garlic is chewy in a great way, but garlic powder can work too. Don't have a gas stove? Slice and sauté the peppers in a little extra oil and combine with the onions. Don't like spicy sausages? Sub in Italian sweet sausages instead!

- Place the peppers directly on a gas flame. Char on all sides until the skin burns. Refrigerate to cool quickly, 10 to 15 minutes. Place on a flat surface and open, seed, peel and discard the skin. (I use a kitchen towel to wipe the skin away. Don't rinse the peppers under water, as it washes away flavor.) Slice the peppers into 1/2-inch slices. Sprinkle with salt and pepper and the sugar. Set aside.
- Split the sausages lengthwise. In a large, heavy-bottomed skillet, heat the oil over medium heat. Arrange the sausages cut-side down in a single layer in the oil. Sprinkle with salt. Cook, flipping once sausages with tongs, so each one browns hard on both sides, 10 to 12 minutes. Remove them from the skillet and set aside.
- In the same skillet, add the onions and fresh garlic with a generous pinch of salt. Cook, stirring from time to time with a wooden spoon, until the onions soften, 8 to 10 minutes. Stir in the peppers and cook for 4 to 5 minutes more. Add the vinegar, granulated garlic, oregano and some Parmesan and stir to combine. Taste for seasoning.
- While the onions are cooking, spread butter on the cut sides of the rolls, then sprinkle with some crushed red pepper flakes. Toast on a griddle over medium-low heat until lightly golden, 3 to 4 minutes. Stuff the rolls with some of the pepper-onion mixture, then top with the sausages, some more pepper-onion mixture and a sprinkle of Parmesan. Serve.
SAUSAGE SAMMICH!!
Hunger pains. I'm so hungry I could eat a shoe, yet I don't want a shoe. I don't want chicken. I don't want fish. I don't want a cheeseburger. I need a SAMMICH, darnitall! So I set out to build it, because you see, you don't just make a SAMMICH, you build a SAMMICH. It started earlier in the week, when I made a bunch of sweet and hot sausage. The process for the sausage takes two days for best flavor. Once done, I portioned off what we would eat for the week and freezer packed the rest. The idea for the SAUSAGE SAMMICH entered my head. A cross between an Italian loaf pizza and sausage pizzaioli, why not?

- Meant to keep the house cool on a hot day, this preparation was done on the grill. Place sausages on a medium hot and clean grill prepped with a bit of non-stick spray.
- Place chopped peppers and onions in a 9 x 9 baking dish and coat with extra virgin olive oil.
- Sprinkle dried herbs, salt and pepper over vegetables and place on grill with sausages.
- Turn sausages and stir vegetables occasionally. After 20 minutes, slice and place sausages in with vegetables. Cook with grill closed an additional 20 minutes on low heat, checking as to not burn.
- While meat and veg are cooking, slice Italian bread loaf in half lengthwise and use your fingertips to press down the bread inside the bottom half, forming a slight depression to cradle the meat and vegetables.
- On the top half, place the sliced mozzarella evenly from one end to another, interlacing with basil leaves.
- Remove meat and vegetables from grill with heat resistant gloves and set aside.
- Use a large spoon to scoop the meat and vegetables into the bottom half of the loaf, then spoon sauce over top and bottom in dollops.
- Place open faced on wire rack covered with heavy duty foil and place back on grill on low heat, close the grill. Cook for five minutes checking not to burn and until cheese is melted.
- Place the top on the sandwich, move to cutting board and serve appropriate sized slices for your hungry guests, or enjoy this monster sammich all on your own, if you can!

- In a small bowl, mix together the spicy honey mustard ingredients. Set aside.
- Form the raw Jimmy Dean Premium Pork Sausage into 8 small patties about the size of your biscuits.
- In a large frying pan, heat oil over medium high heat for about 1 minute. Add patties and cook for 4 to 5 minutes on each side, or until they are cooked through. Remove from heat. Lay Swiss cheese slices on top and allow them to melt over the patties.

PITTSBURGH-STYLE SAUSAGE SANDWICH WITH CHUNKY TOMATO AND BELL PEPPER SAUCE
Why Pittsburgh? Because James Potenziani, known to all as "Chooch," is Italian American and grew up in Pittsburgh. He was the master behind the sausage machine at Pig-by-the-Tail. He is also a football person (he always roots for the Steelers), and he devised the Pittsburgh sausage sandwich to celebrate on Super Bowl day. It became a year-round favorite at Pig-by-the-Tail.

- To make the sauce, heat the oil in a large sauté pan over medium heat. Add the onions, garlic, bell peppers, chiles, and oregano and sauté until the onions and peppers have softened but not browned, about 5 minutes. Add the tomatoes and their juices, salt to taste, and the pepper, decrease the heat to maintain a brisk simmer, and cook, uncovered, until thickened, about 45 minutes.
- Meanwhile, brown the meatballs. Add just enough oil to a large sauté pan to film the bottom and place over medium-high heat. Working in batches to avoid crowding, add the sausage balls and brown all around, about 10 minutes. As each batch is done, transfer to a plate.
- When the sauce is ready, add the browned sausage balls and continue cooking until the sauce is reduced and the sausages are cooked through and tender, about 20 minutes.
- To serve, split the rolls lengthwise. Or, if using baguettes, cut each baguette crosswise into thirds or quarters, and then split the sections lengthwise. Place the bottom halves of the rolls, cut sides up, on individual plates. Divide the sausage balls evenly among the roll bottoms and spoon plenty of sauce over the top. Close the sandwiches and serve right away with lots of napkins.
