SAUSAGE & SWEET POTATO HASH

Meat and potatoes make up traditional hash. Our version uses sausage, sweet potatoes and sometimes, a little salsa. Sometimes we have it for dinner, too. -Christy Scott Campbell, Blooming Grove, Texas

Sausage & Sweet Potato Hash image

Steps:

  • In a large nonstick skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. Stir in sweet potato, onion, chili powder and 1/4 teaspoon each salt and pepper. Cook, uncovered, 15-20 minutes or until potatoes are tender, stirring occasionally. Remove from heat. Sprinkle with cheese; cover and let stand until cheese is melted., Meanwhile, in another nonstick skillet, heat butter over medium-high heat. Break eggs, 1 at a time, into pan; immediately reduce heat to low. Cook, covered, 5-6 minutes or until whites are completely set and yolks just begin to thicken. If desired, carefully turn eggs and cook second side to preferred doneness. Sprinkle with the remaining salt and pepper. Serve hash with eggs and, if desired, salsa.

1/2 cup shredded cheddar cheese
1 tablespoon butter
4 large eggs

Peppery sausages with sweet potato mash image

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the potatoes in a pan of salted water and boil for about 20 mins until soft.
  • Meanwhile, tip the sausages onto a small baking sheet and bake for 10 mins. While they are cooking, mix the pepper sauce with the lime juice, sugar, thyme, garlic and tomato purée, and stir with 1 tbsp water. When the sausages have had 10-15 mins, brush over the spicy mix and bake for 10 mins more.
  • Drain the potatoes and mash with oil or butter, and nutmeg to taste, if you like. Serve with salad, or green beans or peas.

Steps:

  • Preheat oven to 190C/170C fan/Gas 5. Put the sausages on a nonstick baking tray. Cook for 20-22 minutes.
  • Put the onion in a pan with 2 sprays Frylight. Cook on low, covered, for 12 mins, stirring, until soft and slightly golden.
  • Put half the onion in a bowl with 4tbsp water and blitz with a stick blender. Return to the rest of the onion.
  • Crumble in the stock cube, add the puree, vinegar, and 100ml water. Bring to the boil, stirring, and simmer for 5 minute.
  • While the onion is cooking, add the potato to a pan of boiling water, cover and simmer for 20-25 mins, until tender.
  • Add the broccoli to another pan of boiling water, bring to the boil, cover and simmer for 2 minutes Add the beans and simmer for 2 minutes Drain.
  • Mash the potato with the fromage frais and season with black pepper. Serve with the sausages and veg.
