Sauteed Mushrooms with Cognac image

Steps:

  • Heat a large skillet over medium-high heat; swirl in half of oil and half of butter. Add half of mushrooms and half of thyme; cook, stirring occasionally, until mushrooms have released most of their moisture and become golden, about 14 minutes. Add half of cognac and cook, scraping up browned bits from bottom of pan. Season with salt and pepper. Transfer to a bowl.
  • Repeat with second half of all ingredients. Return first batch to skillet until heated through before serving.

3 tablespoons extra-virgin olive oil
6 tablespoons unsalted butter
3 pounds mixed mushrooms, (such as shiitake, maitake, cremini, and oyster), stems removed, cut into 1/2-inch pieces
10 sprigs thyme

Cabernet Steak and Mushrooms image

Steps:

  • Whisk all the marinade ingredients together in a large bowl. Set aside. Transfer half of the marinade into 1 shallow non-reactive pan or bowl and reserve the other half of the marinade for the mushrooms.
  • Trim excess fat from the steaks and make small cuts with a knife into the fat around the edge of the steaks. Marinate steaks for at least 30 minutes at room temperature, or up to 6 hours in the refrigerator.
  • Preheat a grill to high heat.
  • Place steaks on the hot grill for 3 minutes on each side to sear and create nice grill marks. Reduce the grill temperature to low and close the lid. Continue cooking steaks an additional 5 to 10 minutes for medium-rare, turning them halfway through. Let steaks rest for 5 minutes before serving.
  • Meanwhile, dip the mushrooms in the reserved marinade and place on the grill, curved side down. Put the leftover marinade from the steaks and mushrooms in a small saucepan and bring to a boil for at least 3 minutes and cook until reduced slightly. Lightly coat the serving platter with extra-virgin olive oil and whole leaves of fresh rosemary, oregano, and basil. Transfer the steaks and mushrooms to the platter and drizzle with the sauce.

Steps:

  • Heat a large skillet to high heat and add the oil. Wait 1 or 2 minutes for it to come up to the smoking point. Add the onion and garlic and toss furiously so that the garlic doesn't burn. When the onions become translucent add the mushrooms and toss until all mushrooms are golden brown and caramelized. Remove from the heat. Add butter and thyme and season with salt and pepper, to taste. Serve immediately.
  • Cook's Note: Never run mushrooms directly under water; they will absorb water like a sponge, and your saute will be far too soggy. Instead, using a slightly damp paper towel, wipe mushrooms down. Alternatively, use pastry brush and dust the dirt from the mushrooms.

Escargot with Wild Mushrooms image

Steps:

  • Saute 1 chopped shallot with 1 tablespoon butter until the shallots are soft. Add the sliced mushrooms and saute until the mushrooms have released their liquid and it has evaporated. Set aside and keep warm.
  • In a separate pan, saute the remaining chopped shallot in 1 tablespoon butter. Add the snails and the garlic to the pan and toss. Remove the pan from the heat and add the Cognac. Ignite the Cognac with a lighter or by tilting the pan carefully towards the open flame and letting it catch. Flambe the Cognac until it is almost reduced. Add the Cabernet, bay leaf, and thyme, and reduce the liquid in the pan by two-thirds. Pour the veal stock into the pan and let the sauce simmer for 5 minutes.
  • After the snail mixture has simmered for 5 minutes, add in the mushrooms and remove from the heat. Whisk in the remaining butter and stir in the truffle oil. Adjust seasoning with salt and pepper and top with chives. Serve the snails divided between warm shallow bowls.

Steps:

  • In a large skillet, saute shallots and mushroom caps in butter for 2 minutes. Season with salt and pepper.
  • Stir in heated cognac, ignite and stir until flame dies; set aside.
  • In blender or food processor, process garlic, parsley, rosemary, thyme, basil, turmeric, cumin, coriander, ginger, pepper and cream.

Steps:

  • Bring 1 quart of water to a boil in a large saucepan. Add the sliced mushrooms, blanch for 2 minutes, then drain and run under cold water to stop the cooking. Reserve. Heat the oil in a large skillet over medium flame and saute the garlic until lightly browned, about 2 minutes. Remove with a slotted spoon and reserve. Add the blanced mushrooms to the skillet and saute over high heat for 3-4 minutes, or until mushrooms begin to brown. Remove from heat. Add the cooked garlic, basil, Cognac, Cabernet Sauvignon, cream, butter and 1/4 cup of water. Stir to combine, return to the heat, and bring toa boil over high flame. Reduce the heat to low and simmer for 3 minutes, or until sauce thickens slightly. Season to taste with salt and pepper.
