SAUTEED PEPPERS WITH VINEGAR AND OREGANO

This recipe for sweet and tangy sauteed bell peppers is good with pork chops or broiled salmon.

Sauteed Peppers with Vinegar and Oregano image

Steps:

  • In a large skillet, heat olive oil over medium-high. Add onion; season with salt and pepper. Cook, stirring often, until onion softens, 3 minutes. Add bell peppers and chile, if using, and toss to combine. Season with salt and pepper; add vinegar. Stir to combine, cover, and cook until peppers soften slightly, 3 minutes. Toss with oregano.

1 tablespoon extra-virgin olive oil
1 medium red onion, halved and thinly sliced
Coarse salt and ground pepper
3 sweet bell peppers (any color), cut into thin slices
1 hot red chile (optional), sliced
3 tablespoons red-wine vinegar
2 tablespoons fresh oregano leaves

Sauteed Peppers image

Steps:

  • In a saute pan, heat 1 tablespoon olive oil, and then sweat the garlic, and green chili over medium heat. Add the red, orange, and yellow peppers, and saute for 1 minute.
  • Add the red onion, and lemon zest to the pan, and continue cooking until the peppers are slightly tender.
  • Remove the pan from the heat, season with salt, to taste, and add the lemon juice. Drizzle with the remaining 1 tablespoon olive oil, and serve.

1 red bell pepper, seeded and julienned
1 orange bell pepper, seeded and julienned
1 yellow bell pepper, seeded and julienned
1/4 red onion, sliced

  • Heat a large nonstick skillet over medium-high heat. Add in olive oil, sliced bell peppers and sliced red and yellow onions.
