SWISS CHARD WITH CRISPY SHALLOTS

Swiss Chard with Crispy Shallots image

Steps:

  • In a medium pot, heat 2 cups oil to 325 degrees F.
  • In a bowl, toss the shallot slices with the flour. Test a shallot slice to assure the oil is sufficiently hot enough to fry the shallots. Fry them in small batches until golden brown, removing them with a slotted spoon and drain them on a paper towel. Season with salt and pepper, to taste.
  • Heat a large skillet, and add 1 tablespoon of oil. When the oil begins to smoke, add the Swiss chard stalks and season with salt and pepper. Cook until tender, 3 to 5 minutes. Transfer to a serving bowl. Heat the remaining oil and quickly saute the leaves until they "wilt", 1 to 2 minutes. Combine in the bowl with the stalks. Stir in the olive oil and sherry vinegar. Top with the shallots.

6 shallots, peeled and thinly sliced
1 tablespoons all-purpose flour
Kosher salt and freshly ground white pepper
2 bunches (about 2 to 2 1/2 pounds) Swiss chard, trimmed and washed, leaves separated from stalks, the stalks cut into 1-inch thick and 3-inch long matchsticks, leaves torn into bite-size pieces
1 tablespoon extra-virgin olive oil
2 tablespoons sherry vinegar

  • In a large saute pan, heat olive oil over medium-high heat. Add garlic and saute until pale golden color, about 1 minute. Add Swiss chard and saute until soft, but still crisp, about 5 minutes. Season with salt and pepper.;

Steps:

  • Melt butter and olive oil together in a large skillet over medium-high heat. Stir in the garlic and onion, and cook for 30 seconds until fragrant. Add the chard stems and the white wine. Simmer until the stems begin to soften, about 5 minutes. Stir in the chard leaves, and cook until wilted. Finally, stir in lemon juice and Parmesan cheese; season to taste with salt if needed.

Swiss Chard With Caramelized Shallots image

Steps:

  • Heat a wok over high heat until very hot; the metal will have a matte appearance, and a drop or two of water flicked onto its surface should evaporate on contact. Add the oil and heat until oil is shimmering but not smoking.
  • Add fried shallots and garlic, cook 10 seconds, then add Swiss chard and rice wine and toss well to combine. Add fish sauce and chicken stock (or 2 tablespoons water) and continue stir-frying, tossing ingredients together, until chard is just wilted, 1 to 2 minutes. Transfer to a bowl; serve immediately.

Steps:

  • Swiss Chard should be chopped into pieces about 2" square.
  • Heat oil in a wok or skillet.
  • Saute garlic for about 1 minute.
  • Have high heat and saute the swiss chard for about2-3 minutes. (Water clinging to the leaves is enough liquid to cook the chard).
  • Toss (do not over cook) until just wilted and getting soft.

  • Stack several pieces of Swiss chard on work surface. Remove stems and set aside. Roughly cut leaves into pieces about 2-inch square. Repeat with the remaining swiss chard. Transfer the chopped leaves to a salad spinner filled with water. Drain, repeat washing if necessary, and spin dry. Rinse and chop the Swiss chard stems (about the same size as the diced onion.)
  • Heat oil in a large heavy skillet over medium high heat. Add chopped chard stems, garlic, onion, salt, thyme, nutmeg and pepper and cook, stirring often until the onions are starting to brown, 6 to 8 minutes.   • Slice shallots about half an inch thick until you have 8 oz. when sliced. Chop 7-10 fresh chard leaves and stalks about an inch long, and separate the chopped stalks from the leaves. Grate 2 tbsp. of fresh parmesan. Mince 4 large garlic cloves.
  • In a large sauté pan, add 2 tbsp. olive oil and sliced shallots. Sauté over medium heat until brown. About 5-8 minutes. When they look nice and brown, pour in 2 tbsp. balsamic vinegar and turn off heat. Quickly mix shallots in the vinegar to coat, and allow them to sit in the pan as it cools for about 30 seconds to caramelize them. Remove shallots and set them aside.
  • Add 2 tbsp. salted butter and 2 more tbsp. olive oil to the pan. Over medium heat, add the chopped chard stalks and sauté for 2-3 minutes. Add minced garlic and sauté with the stalks for 1-2 minutes, until the garlic is a nice light brown.
  • Place the chopped chard leaves right on top of the stalks and garlic and allow it to wither down for about 2-4 minutes, then begin to move it around the pan to stir up the stalks and garlic below. Add caramelized shallots and grated parmesan. Gently mix ingredients together, sprinkle with fresh pepper and crushed, shaved almonds and serve.
