CHEDDAR BAKED EGGS

Cheddar Baked Eggs image

Steps:

  • Preheat oven to 350 degrees.
  • In a large saute pan over low heat, melt butter. Add flour and cook for 2 to 3 minutes, taking care not to brown the flour. Slowly add hot milk, using a wire whisk to stir. Cook the roux into the milk over low simmer for 3 to 4 minutes, until mixture has thickened. Add the salt, pepper and cayenne. Stir in the cheese and the green onions. Remove from the heat when the cheese has fully melted.
  • Using a large baking dish or individual ramekins, pour the hot sauce into the dish(es). Break the eggs, one at a time, into a small, shallow fruit dish and slide them, one at a time, into the sauce. Place in the oven and bake for 7 to 8 minutes or until the whites and yolks have begun to set. Serve immediately.

My parents always served this egg casserole for special occasion breakfasts, and it remains one of my favorites. In the summer, they often served it along with tomatoes from the garden or fresh fruit and in the winter we often served it with hearty bread or grits and juice. Delicious!

  • Preheat oven to 350 degrees.
  • Sprinkle cheese in 9x9 inch square baking dish.
  • Dot with butter.
  • Mix cream, mustard, salt, and pepper, and pour half of the mixture over the cheese.
  • Pour eggs on top.
  • Pour remaining cream mixture over the eggs.
  • Bake 25 minutes.
  • Serve immediately.

Steps:

  • In a small saucepan, saute onion and green pepper in 3 tablespoons butter until tender. Transfer to a greased 8-in. square baking dish. Break eggs over the onion mixture. Melt remaining butter; toss with bread crumbs, salt and pepper. Sprinkle over eggs. Place dish in a large baking pan; pour boiling water into larger pan to a depth of 1 in. Bake, uncovered, at 375° for 12-15 minutes or until the eggs are firm.

Steps:

  • Preheat oven to 350 degrees F. Spray bottom of 9x13 baking dish with non-stick cooking spray.
  • Brown and crumble sausage in a frying pan until thoroughly cooked. Drain. Place in bottom of 13x9 baking dish, lightly pressing into place.
  • Saute red and green peppers and onion until tender. Layer vegetable mixture then cheese on top of the sausage in baking dish.
  • In a bowl, combine eggs, milk, garlic powder, and pepper. Pour egg mixture over contents of baking dish.
  • Bake for 30-35 minutes. Cool slightly, cut into wedges.
