PORK CHOPS AND RICE
Steps:
- Preheat the oven to 350 degrees F.
- In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
- Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
- Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

Steps:
- In a large skillet over medium heat, brown pork chops on both sides.
- Lightly spray the slow cooker with cooking spray. Then place brown and white rice, onion, butter, peas, water chestnuts, and mushrooms in the slow cooker. Pour in water, broth, and Worcestershire sauce. Stir in onion soup mix, season with pepper, and top with pork chops.
- Cover, and cook on Low setting for 7 to 9 hours, or on High setting for 4 to 5 hours.

- Heat water and butter in a pan on medium heat until butter is melted. Cut each pork chop lengthwise, making two strips. Brown each side in a skillet with a little oil, sprinkle with a dash of salt and pepper if desired. In a mixing bowl, put rice (uncooked), bell pepper, onion, and tomato and mix gently. Put rice mixture in a cassarole dish, arrange pork chop strips on top of rice, then slowly pour water with melted butter over the top.
- Cover and bake in a 350 degree oven for about an hour.

- Brown the pork chops in oil and garlic. Season liberally with garlic salt and black pepper.
- While the pork chops are cooking, combine the remaining ingredients in a bowl and pour into the 9x13 pan.

- Combine the flour, cavendars greek seasoning, mustard, and pepper in a small bowl, stirring well.
- Dredge the chops in the flour mixture; cook in oil in a large skillet over medium high heat until browned on both sides. Remove the chops, and discard the drippings.
- Combine the water, soy sauce, ketchup, and orange marmalade.
- Return the chops to the skillet, and pour the sauce over the chops. Bring to a boil; cover, reduce the heat, and simmer for 20 minutes or until the chops are tender, turning once.
- Sprinkle with green onion slices.

SIMPLY OVEN BAKED PORK CHOPS AND RICE
This is DH's recipe. It is simple comfort food and is very versatile. You can use chicken quarters in place of chops or chicken broth in place of water. Feel free to experiment with different herbs. We never make this the same way twice. A side note: I would recommend using a bone in, fattier cut of pork and not loin chops in this recipe.

- Preheat oven to 350 degrees.
- Sprinkle pork chops with salt and pepper.
- In a large skillet, heat olive oil over medium high heat and brown pork chops (about 2-3 minutes each side, turning once).
- Spray a 9 x 13" baking pan with non-stick cooking spray and pour the chicken broth, tomato sauce, green chilis, taco seasoning, uncooked rice, and onion; mix together until completely incorporated.
- Place the pork chops on top of the rice mixture and top with the green and red peppers.
- Cover with foil and cook for about 50-60 minutes or until the rice is tender (you will want to make sure that you don't over cook the pork chops, so check them around 50 minutes).
- (If the rice needs a little more cooking time, just remove the pork chops for about 10 minutes while the rice cooks longer. Then place pork chops back on top of the rice and add the cheese.)
- Turn oven off and top with cheese.
- Let the cheese melt for a couple of minutes.

- Preheat oven to 350°F. Heat a large ovenproof skillet over medium-high. Season pork with salt. Swirl oil in skillet, add pork, and cook, flipping once, until golden brown, about 5 minutes total. Transfer to a plate.
