SAVOURY CHICKEN CASSEROLE
My Mom saw a recipe for a chicken casserole in a cookbook. I didn't want to use a canned soup for the casserole so I created this recipe. My family loved it!

- Cook noodles as directed on package, just to al dente'. Drain and set aside. Cube chicken, place in a medium bowl. Mince onion and celery. Set aside.
- Spray an 8x8 casserole dish with cooking spray. (you can grease the pan lightly if you prefer.) Preheat oven to 350 degrees.
- Melt 1 T butter in a medium saucepan, over medium-high heat. Saute' the onion and celery in the butter until soft. Add the onion and celery to the chicken. Stir to mix.
- Melt 2 T butter in a medium saucepan, over medium heat. Sprinkle with 2 T flour. Stir flour, blending to make a roux. (it should look like wet sand) Let the roux brown just for a minute or two to remove the floury taste.
- Add the chicken broth, whisking to thicken. Cook for several minutes. Then add the cold milk, again whisking to thicken. Add thyme, marjoram, savory, salt, pepper and poultry seasoning. The sauce should be the consistency of a creamed soup.
- Remove pan from heat. Fold in the sour cream. Set aside.
- Melt 2 T butter. (I used the microwave to melt the butter.) Crush the butter crackers in a small bowl. Pour the melted butter over the crackers and mix well.
- To layer the casserole: Start with a layer of noodles, then a layer of chicken mixture. Repeat. Pour the sauce over the layers of chicken and noodles. Top with the buttered crushed crackers. Bake at 350 degrees for 30 minute until bubbly.
SILVER'S SAVORY CHICKEN AND BROCCOLI CASSEROLE
This is an easy to make recipe that is great for potlucks, church gatherings, holidays, or outside gatherings. It is also a non-hassle recipe for you working folks, single folks, or even for kids to make! You can even make it ahead of time by preparing the casserole and then freezing it - for up to 3months! My family loves this casserole and we change things around in it, by adding or taking out different things. Have fun with it, and I would love to hear comments on what worked for you and what changes you made! Serve with dinner rolls or French bread and a salad!

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 6 to 8 minutes or until al dente; drain. Preheat oven to 400 degrees F (200 degrees C.) Grease a 9x13 inch casserole dish.
- Melt butter in a large saucepan over medium heat. Saute onion until tender, about 3 minutes. Mix in flour. Gradually stir in chicken broth. Slowly stir in milk, and cook, stirring, until sauce begins to thicken. Season with salt and pepper.
- Place cooked noodles in the bottom of casserole dish. Arrange cooked chicken in an even layer over noodles. Place broccoli over the chicken. Pour sauce evenly over the broccoli. Combine cheeses, and sprinkle half over the casserole.
- Bake in preheated oven for 20 minutes, or until the cheese melts. Remove from oven, and sprinkle with remaining cheese. Allow to set for 5 minutes, until cheese melts.

- In a large bowl, combine the soup mix and water. Add the chicken, potatoes and onion; toss to coat. Transfer to a greased 13-in. x 9-in. baking dish. , Bake, uncovered, at 350° for 40-45 minutes or until vegetables are tender and a thermometer reads 170°, stirring occasionally.
