SCARECROW ICE CREAM CONES

Looking for a scarecrow shaped dessert for Halloween? Enjoy this recipe made using Honey Nut Chex® cereal, ice cream and decorated with Betty Crocker® white decorator icing and candies.

Scarecrow Ice Cream Cones image

Steps:

  • Line cookie sheet with waxed paper. Using ice cream scoop or 1/2-cup measuring cup, scoop 12 mounds of ice cream onto cookie sheet. Quickly shape into balls. Freeze 30 minutes or until firm.
  • Place cereal in resealable food-storage plastic bag; seal bag and coarsely crush with rolling pin or flat side of meat mallet. Remove ice cream balls from freezer; roll in crushed cereal until well coated. Return to cookie sheet. Freeze 1 hour or until firm.
  • Just before serving and using icing to secure candies, decorate each ice cream ball with 1 piece candy corn for nose, 2 chocolate candies for eyes and 8 to 10 pretzel pieces for hair. Top each ice cream ball with ice cream cone hat.

CHRISTMAS TREE ICE CREAM CONES

Sugar cones filled with your favorite ice cream get a festive makeover for a sweet Christmas dessert. This recipe is perfect for getting the kids involved but equally as fun for treat lovers of all ages. The cones are frosted with a classic Swiss meringue, which holds up well in the freezer, so these can be made a few days in advance. Be sure to save an egg carton as it will come in handy when filling the cones. This recipe calls for mint chocolate chip ice cream, but any flavor will work! Additionally, it calls for store-bought pound cake, but any cake scraps will do the trick.

Christmas Tree Ice Cream Cones image

Steps:

  • Slice the pound cake crosswise 1/2 inch thick. Place an ice cream cone open-side down on 1 slice and stamp out a round of cake; remove the round to a plate. Repeat until you have 8 rounds of cake. (Save the cake scraps for another use).
  • Turn a cardboard egg carton upside down. Cut a hole big enough to snuggly fit the pointy side of a sugar cone in 8 of the cups with a sharp paring knife. Insert 1 cone into each prepared hole. Fill the cones with ice cream, leaving 1/2 inch of space at the top. Press the cake rounds on top of the ice cream to cap it off. Place the egg carton in the freezer while you make the meringue.
  • Bring a few inches of water to a boil in a saucepan that can hold a heatproof stand mixer's bowl above the water, but not touching the water.
  • Whisk the sugar, egg whites, vanilla and salt in the stand mixer bowl. Set the bowl above the boiling water and continue to whisk constantly until the sugar has dissolved and the egg whites are slightly frothy, 3 to 4 minutes. Transfer to the stand mixer fitted with the whisk attachment and beat at medium-high speed until the meringue is cool and can hold very stiff peaks, about 6 minutes. Add the food coloring and beat until just combined.
  • Transfer the meringue to a pastry bag fitted with a small star piping tip (see Cook's Note). Working with 1 cone at a time (leave the remaining in the freezer so the ice cream does not melt), place round-side down on a wire rack-lined baking sheet then pipe small stars all over the cone until completely covered. Decorate with sprinkles. Transfer to a plate and freeze while you decorate the remaining cones. Alternatively, use a small offset spatula to spread the meringue onto the cones and then decorate with sprinkles. Freeze until ready to serve, up to 3 days.

Homemade Ice Cream Cones image

Steps:

  • Whisk together the eggs and sugar in a large bowl until frothy. Whisk in the butter, milk and vanilla. Gradually whisk in the flour and salt until smooth. The batter should be thin; you can stir in more milk if needed.
  • Heat a small skillet or griddle over medium heat. Brush the pan lightly with oil. Pour about 1/4 cup of batter onto the skillet and turn to spread out the batter into a thin circle. When the underside is golden brown, flip over and cook until golden on the other side. Remove from the pan and form into a cone while it's hot, squeezing the end to seal. Place on a wire rack to cool and harden completely. Repeat with the remaining batter.

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter and cool it.
  • In a small mixing bowl, whisk together the egg whites, sugar and vanilla. Stir in the salt and half of the flour, then mix in the melted butter. Beat in the rest of the flour until smooth.
  • Line a baking sheet with parchment paper. Use the back of a big spoon to spread 2 level tablespoons of the batter into a circle 6 inches across. Try to get the circles as even and smooth as possible. Cook's Note: You're likely to get 2 rounds on one standard baking sheet.
  • Put the baking sheet in the oven, and begin checking the cones after about 10 minutes. Depending on your oven, they'll take between 10 and 15 minutes to bake. The circles should be golden brown throughout (some lighter and darker spots are inevitable so don't worry). Remove the baking sheet from the oven. Use a thin metal spatula to loosen the edge of one disk. Slide the spatula under the disk, quickly flip it over, and immediately roll it around a cone form
  • Press the seam firmly on the counter to close the cone and pinch the point at the bottom securely closed. Let the cone cool slightly on the mold until it feels firm, then slide it off and stand it upright in a tall glass to cool. Roll the other cones the same way. Repeat, using the remaining batter.
  • Place in cone holder of some sort to cool. Glasses work well.
  • Serve up with one or two scoops of your favorite ice cream.

Steps:

  • Heat oven to 375°F. Place paper baking cup in each of 16 regular-size muffin cups, or grease and flour muffin cups.
  • Beat Bisquick mix, sugar, milk, shortening, vanilla and egg in large bowl on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Fill muffin cups about half full.
  • Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediantly remove from pan; cool completely. Frost and decorate cupcakes as directed below for Scarecrows and Hairy Spiders. Scarecrows: Frost 8 cupcakes with vanilla frosting. Decorate each ice-cream cone with bow made with fruit rolls. Place ice-cream cone upside down on each cupcake for hat. Arrange crushed cereal on cupcakes for hair. Use candy corn for nose, red licorice and small gumdrops for mouth and candy eyes for eyes. Hairy Spiders: Frost 8 cupcakes with chocolate frosting. Squeeze large black gumdrops, one at a time, through garlic press to form hair; arrange on cupcakes. Insert black licorice pieces into cupcakes for legs. Place candy eyes on large black gumdrops for eyes.
